“Green Walnut” is a surprising and innovative Lambic beer of Oud Beersel. For the production of the Green Walnut real fruit is used, in the same way as for the Oude Kriek of Oud Beersel.
In July the still green walnuts are gathered in the Oud Beersel orchard and are added to the Lambic beer that matured in wooden wine barrels.
After the bottle fermentation this sparkling walnut Lambic of Oud Beersel is called Green Walnut, which is a strong companion for blue-veined cheese, dried ham and salads with nuts.
The green walnuts macerate in the Lambic beer enabling them to unfold their taste and flavour. The initial bitterness which is extracted from the walnuts is tempered during the ripening of the walnut Lambic. This results in a delicate balance between the light sourness of the Lambic beer and the bitterness of the green walnuts. The wooden wine barrels provide a subtle touch of red fruits to the beer.

Bottle from Dranken Vande Woude, Pervijde Diksmuide, West Flanders consumed at Scott and Mandy’s, Dumbleton, Saturday 26th August 2017 The colour on the pour almost seems to have a very slight green hue, now perhaps that might be the light reflecting back off the green bottle I don’t know but it looks cool. In the mouth it is a fantastic work out for the tastebuds with zippy, zappy, funky, fabulous flavours bouncing around. The green walnut flavour is subtle, there is a little earthy edge, but it is really just a cracking young, fruity tart and tangy Lambic, lovely stuff. A7 A5 T7 P5 Ov15 3.8

2020-02-15, tasting at Sergey's, vintage 2017, bb 15/04/2021, almost 3 years old, 9-4-8-4-18=43
Hazy dark blond colour. The aroma is extremely funky, pungent. Dry, highly carbonated, funky, the acidity is moderate, there is some cedar peel, the walnut translates into some astringency.
Vibrant.
2017-03-02, tasting at Matt's; corked, 8-4-8-4-17=41
Hazy light amber color, almost no head. Barnyard aroma, so nice to smell this true lambic smell again after some time smelling untrue beers (8.5). Quite smooth mouthfeel; the acidity is very moderate for a Lambic, but it has a quite good Lambic character, some fruity touch; I'm familiar with green walnut and I'm not getting it here.
Excellent drink.

Bottle thx to skortila, 2016 version, 35 cl sample. Hazy to cloudy in the end, golden color, medium soapy head. Aroma of some citric tartness, bit funk, lots of wood and a bit of cork. Soft sour taste. Not very different from a regular Oud Beersel geuze, couldnt really notice a lot of walnut. And also had much better geuzes or sours lately. Middle of the road, but still very tasty.

(750ml 2016 bottle from kihoskh.dk) Pours an almost clear medium orange with a very active white head that piles high for a split second and than rapidly fades to nothing, without lace. Aroma of lime peels, green apples, straw, fairly heavy and leathery wood, cellar, slightly tart red berries, fairly subtle funky notes of stables, and a nutty, earthy and bitter note that’s reminiscent of being under a walnut tree when they’ve fallen to the ground. Flavour is surprisingly fruity and juicy, with notes of green apple, yellow plum, slightly unripe peach, some very lactic and zesty lemon-lime notes, hints of berries, grass, a bit of bitterness that’s not explicitly nutty, woody character is more subtle than the nose too. There’s a bit of yeastiness in the back end but low funk as well. Quite high effervescent carb, somewhat reminiscent of champagne. Not really what I was expecting, which was something more overtly nutty and less fruity.
