In the world of German brewing, Kräusen refers to the intense proliferation of bubbles and foam formed during fermentation of a young or "green" beer. And Aufkräusen (literally to kräusen it up), refers to a historic brewing technique in which some green beer is added to a fully-matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, austere flavors of a fully-matured lager.
Aecht Schlenkerla Kräusen starts out as normal Helles Schlenkerla Lager and matures for months in the old rock cellars underneath the brewery. Just before filling it is blended using the before mentioned "Kräusen" technique with classic Märzen Rauchbier. The result is an unfiltered, bottom fermented and amber color Märzen Lager hybrid with a vibrant and slightly smoky flavor.

(Keg at Tankerfest 2019) The beer poured copper coloured and clear. Its head was medium sized and white. Aroma had smoke, grain and grass. Palate was medium bodied with medium carbonation. Flavours were grass, smoke, lightly caramel, malts and bitterness. Aftertaste was malty, smoky and bitter. A tasty smoky brew with grassy notes.

23-07-18 // 500ml bottle from Maruhn. Clear amber golden. Solid ham smoke in the nose. Full bodied and full flavoured. Light smoke notes. Caramel malty sweetness. Lovely meal. 08-07-19 // 500ml from the wooden cask in the brewery. Lovely!

Bottle from Systembolaget. Aroma is toasted nutty smoked. Nice golden colour. Taste is very green, reminds me of Orval vert, this kind of Belgian, boozy yet not in Abv tasting beer with strong grassy hop flavours. Not my favourite but still interesting.

Bottle. Wine Rack, Sharrow, Sheffield. Light amber. Soft haze. Messy, lasting, white head. Nose has smoked cheese. Frazzles. Some fruity notes akin to raisin and sultana. Taste is fairly sweet and smoky. Some hop leaf bitterness. Medium body. Bright and crisp carbonation. Smoky sweet on the finish, before a lingering, light bitterness.

Draft. A- Smoke, malty. A- Copper color, hazy liquid, off white head. T- Smoke, malt, watery, caramel. P- Medium body, thin texture, average carbonation, watery finish. O- Sad to say this was probably my least favorite Schlenkerla and it was the one I had while visiting the brewery. So much for the perfect lunch at a brewery, but beggar can't be choosers. Okay but not too fond of this one. Weak overall.

Tap at Festival minipivovaru na Prazskem hrade. Classic rauch character is all over this beer, while maintaining an impressive drinkability. Rather thin body despite the heavy flavour, rather high carbonation. Very clean. Very good.
