In the world of German brewing, Kräusen refers to the intense proliferation of bubbles and foam formed during fermentation of a young or "green" beer. And Aufkräusen (literally to kräusen it up), refers to a historic brewing technique in which some green beer is added to a fully-matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, austere flavors of a fully-matured lager.
Aecht Schlenkerla Kräusen starts out as normal Helles Schlenkerla Lager and matures for months in the old rock cellars underneath the brewery. Just before filling it is blended using the before mentioned "Kräusen" technique with classic Märzen Rauchbier. The result is an unfiltered, bottom fermented and amber color Märzen Lager hybrid with a vibrant and slightly smoky flavor.

Inköpt på Systembolaget. Bärnstensfärgad vätska med två fingrar tjock skum. Lätt degig, brödig bakgrund i doft men främst rök arom. Rökighet återkommer i smak med lätta smaker av degig ljus kaka. Neutral beska med ett lätt gräsigt avslut.

Bottle: Poured a light brown color beer with a large off-white foamy head with good retention and some lacing. Aroma of light caramelized malt notes with some smoked notes is pretty enticing. Taste is a mix of smoked malt notes with some light caramel malt and dry finish. Body is about average with good carbonation. Smoked is not as dominant as other beers for this brewery but the overall mix is great and highly drinkable.

Bottle. It's an unclear amber colored beer with a big foamy off-white head. Lacing. The aroma has a nice smokiness, it's ham-like, with caramel and a very light fruityness. Some grainy hints too. It's medium bodied and very nicely carbonated, mostly on the dry side, but with some malty sweetness in the back. Smoked, almost ham-like flavor with bread, caramel and a light piney bitterness. A bit short in the finish, except for the bitterness and dryness that lasts for a good while. A really nice one indeed. Easy drinkable, tasteful quality. 191109

Bottle from Gulating. Practically clear, deep golden body with a nice, foamy off-white head. Lively but pleasant carbonation. Aroma has a nice, relatively light smoked part that integrates well with the pilsner malt and a touch of caramel. Bonfire and smoked meat in the background. Flavor is exactly as expected from the aroma, really well balanced and not dominating at all, just distinct enough. Sweet pilsner malt, moderate bitterness, bonfire and smoked meat in the background. So nice and balanced, a perfect smoked beer for beginners as well as this really should not be at a lever that could offend anyone if you're bit the picky type then.
