A beast of a beer unlike any other Payette brew. Aged in 10 year old bourbon barrels in honor of our 10th anniversary. Wildly robust recipe with rich oak, vanilla, and bourbon notes, heat from the alcohol, and toffee flavors.

Thanks Toby for this 2013 bottle!

Pours a pitch black, small head of tan foam, bits of lacing.

Big caramel and sweet chocolate notes up front, some oxidation that presents itself as Port like character reminiscent of an aged English Old Ale or Barleywine. Wow. Bourbon is mild and not obtrusive.

The taste backs up everything I said aboot the smell and that, I find, glorious. I have had a few Imperial Stouts that went that way in the past with significant aging.

Full bodied, light carbonation.

Dang, this is good!

650 ml bottle, solo domed the entire bottle. 2016 vintage. Lush tan head on a pitch black body. Aroma is vanilla, deep roast, moderate chocolate. Bourbon is an afterthought.

The flavor shows a mellow bourbon after the sip. The body has dark roasted grain base with hints of vanilla and dark bitter chocolate. The body is full, thick, and velvet like in texture. ( exactly what I like in the style ). The fact that the barrel treatment is mellow does not bother me. The positive element with low bourbon content is the 10 % is covered extremely well. Or perhaps the bourbon really mellowed after some sitting. Overall, the base stout is a solid recipe.

Bottle from The Beer Monger, Portland, vintage 2014, 2 years old
Black color, small brownish head. A bit old maybe, slim, with moderate sourness, these are giving the beer away as oldish; besides that it’s a decent Imperial Stout, a bit boozy and with a touch of barrel; I’d like to try a fresh bottle of the regular 12 Gauge. And I’d like less booze.
Enjoyable.

650mL bottle, pours black with a small tan head. Aroma brings out moderately roasted malt, followed by some cocoa and toasted bread. Flavour brings out some bourbon notes, followed by roasted malt, cocoa and toasted bread. Wonderful notes from the barrels, without dominating. Well-balanced. Excellent.

Medium brown. Not much head. The aroma has a nice chocolate and bourbon note. Almost a cherry note. Sticky sweet, soy sauce, and with a great barrel note. Malts are complex. Good, rich flavour. Excellent stuff.

Bottle from Tanner one of the brewers (cheers Tanner) consumed at Jude and Bazs, cheers, Herefordshire Friday 21st July 2016, Wow don’t muck about then Baz (as soon as we turn up he cracks open this beast). Thick in the mouth, boozy, bourbon. An impressive beast of a beer. The bourbon does push through, sweetness, some liquorice, chocolate and heavy malt. It is a very good beer. Perhaps could have been smoother or creamier and a little less boozy otherwise still very, very good. A7 A4 T8 P4 OV16 3.9

22oz bottle pours out black topped with a tan head. Nose is big chocolate roast malts molasses sweetness coffee. Taste is more of the heavy roast malts chocolate some molasses sweetness a nice coffee acidic touch. Probably one of the best beers they make. --- Beer merged from original tick of 12 Gauge Imperial Stout - Barrel Aged on 19 Jan 2015 at 20:04 - Score: Appearance - 8 | Aroma - 8 | Flavor - 8 | Texture - 8 | Overall - 8.5. Original review text: 22oz bottle pours out black topped with a quick to disappear tan head. Nose is lots of sweetness milk chocolate light roast malts bourbon notes and nice molasses. Taste is as the nose with lots of sweetness chocolate marshmallow roast and a nice little barrel note. I love sweet beers and this one hit the spot.

Bottle, 2013 vintage. Pours a near black color, some big brown bubbles fade quickly leaving no head. At first sniff there is a rich sweetness to it… roast, dark chocolate, dark pitted fruit, light smoke, and bourbon. The mouthfeel is a little on the thin side, otherwise it might rival the likes of BCBS in my opinion… so close to being awesome. Still a very well done beer. The rich maltiness and dark chocolate have sort of faded a bit from the nose, but the bourbon barrel is still there and at a quite delicious level. Can’t wait to crack open a fresh bottle.

Bottle - Holy boozy batman, but with a minute mellows a tad to dark chocolate, coconut and bourbon. Jet brown with a decent light brown head. Lots of chocolate, coconut and more boozy bourbon notes. The taste is actually much milder than the nose, thankfully. Sweet and pleasant.

22oz bottle pours an inky black with some ruby edges and some cloudy white head. Nose is cedary, sprucey, caramel, mild smoke, pepper, brown sugar. Flavor has more vanilla, caramel, brown sugar, cakey, chocolate. Spruce too. Full bodied, sticky finish.
