Deschutes Brewery and Hair of the Dog Brewing join forces to weave The Dissident and The Stoic and Fred and Adam into an artistic collage of cask-aging alchemy. Damn. Beer is fun!

Conflux No. 1 - Collage is the second release in the Deschutes Conflux Series. These beers were brewed in March of 2010. One hundred percent of these beers spent two years aging in a variety of oak barrels: Rye Whiskey, Cognac, Sherry, Pinot Noir, Bourbon, used American Oak, new American Oak and new Oregon Oak.

Bottle. Amber-brown beer with a dark cream head. Sour and bourbon aroma with red wine and sweet malt. Sour and bourbon flavor with malt and light caramel. Medium bodied. Sour and bourbon lingers with malt and caramel.

12 oz bottle purchased at Gomers South in Kansas City, Missouri. Best after 4/30/13 on the label. I am drinking this one early to see if I should stock up on a few more for the cellar. The pour is a hazy brown orange golden with a firm two inch head, that eventually breaks up slowly with some decent sized bubbles. Nice pretty lacing left behind as the beer falls. The aroma is soft malt, wood notes, both fresh oak, and more aged, along with gentle light boozy notes. There is a pepper like spice, but it has no sharpness whatsoever, almost rye like. The red wine notes waft out in the back, adding nice depth and complexity. Really well integrated nose. The taste is strong malt up front, featuring the wood and whisky, then turning mid taste towards the tannic earthy, and grape (fruit and skin) of the Red Wine. The wood lingers, tasting of cedar and fresh oak. The finish has perceptible heat, though that worked well with the big malt, whisky and wine flavors. Normally, this is not my type of beer at all, but the flavors play really nicely together and there is a gentleness to the wood and booze. The palate is full bodied, chewy almost, with soft natural carbonation and the tannic hot finish. This was a fun beer out of the gate, plan to grab a couple more to taste as it ages.

Appearance: Clear mahogany with a small tan head and good lacing
Aroma: Bourbon, woody and oak
Taste: Woody, some light sourness, bourbon and vanilla
Very nice and smooth. A complex beer, the more you drank the more it changed. The alcohol was well hidden.

12 ounce bottle. Pours a deep mostly clear ruby color with a medium light brown head. A superb rich fruity and oak nose, almost vinous, berries. The flavor is rich reminiscent of a sour Adam, bourbon, berries, earthy, pronounced bourbon. Damn good. Festive. Light sourness with vanilla and big bourbon.

12 oz. bottle, pours a hazy reddish amber with a small beige head. Aroma is that of an oud bruin, with tart berries, oak and a bit of vinegar. Flavour is less sour than the nose suggests, with sweet cherries, dark, soured fruits, and vanilla. Extremely complex, well-balanced between sour and sweet. Excellent experiment.

12 oz bottle from Imbibe Wine. Nose is tart, prunes, oak, toffee, a little red wine, and dark slightly sweet fruitiness.Hazy rusty brown with a small beige head. Flavor is red wine with lots of oak, dark fruits, and tartness with bretty hints.

Bottle with thanks to gorditoabd. Body is a ruddy brown with a minimal head and sour and tangy aromas with an underlying sweetness. First sip shows that this is an odd bird. Kind of sour and cloying at the same time. Not sure I totally approve of this one. I can see what they are trying to do, but it’s not for me.

Bottle. Ugly muddy looking beer with full throated aroma. The aroma has a good whiskey nose. Full bodied and flavourful, a lovely caramel note. Raisin in the finish. Get it before it’s gone

Pours hazy medium brown color with tan head. Great aromas of bourbon, sour cherries, oak, toffee, and red wine. Sweet caramel, bourbon, sour cherries, and red wine flavors with hints of oak. Slight heat from the alcohol but doesn’t feel like 11+ abv. Medium to full body with moderate carbonation. Pricey, but worth trying once. A really nice collaboration.

Bottle - Raisin, brown sugar, sweet peppers, very fragrant wine notes with an alcohol finish. Cloudy maroon with very light head. Sourness and alcohol prevail, with a complex overall fruitcake taste. The complexity is evident and will improve with age. I think it is still to brash and young to enjoy properly.
