For Carnival Brettanomyces 2018 (our favourite beerfestival) we invited German homebrewer, beer historian and yeast-maniac Benedikt Koch of Wilder Walt to brew something outrageous. We decided on a Lichtenhainer, with a funky twist.

Lichtenhainer is a historical German style, originally a slightly sour pale beer brewed with smoked malts and soured with lactic acid bacteria. We used Mud King, an ever evolving blend of wild yeasts and bacteria, for fermentation and then added peach puree to it. It is dry, fruity with subtle peachy and smokey flavours. Crazy, yet delicious!

On draught at BeerHeadZ Nottingham. Mid-gold and hazy with no head whatsoever. Kielbasa in the aroma. Little room for much else. Taste is more subtle: a wondeeful sour/salt interplay with a tart fruit finish, all the while intensified by the smokiness in the grain. Soft to medium carbonation. Absolutely incredible.

Carnivale Brettanomyces. Blonde. Beechwood smoke and citrus in the aroma. Soft milky notes. Lemony flavor with beechwood. Pleasant, but odd.

5 July 2019. At Dok Brewing Festival. Cheers to Anke & Ghent beer crew! Hazy yellow, no head. Aroma of smoked ham, smoked salty fish, bacon, tobacco, unripe peach, grass, apple. Taste is medium fruity sour, lots of lemon & starfruit, quickly overwhelmed by smoky notes of ham & bacon, somewhat 'fishy' (literally) & salty in the back, with a bitter undertone of grass & stonefruit. A constant yeasty & bready character announces a dryish, tart, floral hoppy finish where yellow fruit, yeast & wheat linger, vague smoke too. Medium body, slick texture, fizzy carbonation. Weird overall, still okay, almost a bit too 'fishy' (figuratively).

thnx to Kevin Devos ! Pours unclear blonde. Small white head. Smell is mild smoke, fleshy, with a zesty, tart undertone . Taste is mild smoked, sharp zesty, lemon tartness. quite drinkable, even though I don't like smoked at all, i must admit this does work . medium thin body, med high carbo, working great with the tartness. a well balanced, easy drinkin but unique beer. peaches don't really show. nice
