On 22nd July 2016 we produced a turbid wort in the style of traditional Lambic producers. This was fermented using lees (previously used to ferment Foxbic) from cider producer Tom Oliver, and aged in two old oak barrels for fourteen months. One barrel was dry hopped and became Saison Lees. The other barrel was left unaltered and allowed to age further in bottle before release. The result is a paler, drier and more refined beer than its counterpart.

--Bottled at RBESG Grand Tasting 2023. -- Almost clear golden, mid sized head. Citric nose with with wine. Tart with medium body and rounded, spritzy mouthfeel. Citric with white wine. Peppery mildly bitter finish.

Bought this to trade when the Mills hype was red hot. What happened to that and who cares? Anyways, just a light haze on this gold beer, tidy white head. A bit of white wine nose. Palate is light and semi dry with decent fine carbonation. Smooth malts, mildly sweet, touch of creamy sweetness. Nice white wine and cider vibes here, modest barrel vanilla and a whisper of bourbon fruits, very mellow. Finishes smooth and semi dry. This would be a top notcher for me if it wasn't for the acetic burn on the finish. Just provided that awkward close to a fine tasting beer. The sour heads probably like it but most of em need a slap upside the head! 😁

Bottle. Mills online shop. Soft haze on a pale straw gold. Lovely dense lasting white foam. Nose has old lemon peel. Whiff of the bourbon barrel. Crisp sweet apple. Bright brett. Taste is sharp and fruity with a herbal bretty funky bitterness. Super fresh and lightly sharp mouthfeel. Brisk carbonation. Mouthwatering gear this. Juicy funky finish. Class.

Bottle, 750 ml shared with Max, kajser27 and Miro B. Hazy yellow, white head. Funky, lots of fruit, citrus, apples, refreshing, juicy. More funk. Just a tad short in finish, but still mighty delicious.

Can shared at the mbcw mixed beer celebration watford tasting. Thanks to Wingman. . A light hazed golden yellow coloured pour with a decent white froth. Aroma is tart, horsey funk, vinous funk, dry grape. Flavour is composed of tangy lemon, pithy citrus, grass, horsey funk, light vinegar edge. Lovely. Palate is tangy, sour, prickly carbonation.

Bottle split at MBCW '22 (Maudlin Beer Celebration Watford), thank to Dave, 13/05/22. Lightly hazed golden blonde with a white cap. Nose is citric zest, green berry must, damp hay, gooseberries, light funk. Taste comprises dry rot, wood must, green berry funk, straw, lemon rind, mellow barrel, tangy fruits. Medium bodied, fine carbonation, light drying close with a tarte drying close. Solid.
