Bouteille 75cl de HopDuvel. Dorée trouble moyen sur un léger orangé, col blanc crémeux. Arôme offre cette signature typique de Fantôme, profile fruité citronné avec un rétro-nasal agrumes et légèrement épicé. Ma suspicion étant que Hill Farmstead à contribuer à l’ajout de qcq houblons américains. Palais reste encore ici proche des autres Fantôme. On aime ou on n’aime pas mais pas mal de bières semblent au final souvent se ressembler. Ici, le profile levure belge à la Fantôme est bien présent et ajoute un soupçon d’épice rappelant le coul de girofle. Pétillant est haut-moyen. Un houblonné fruité vient balancé un peu le tout en terme d’amertume avec un petit côté pamplemousse ponctué d’une pointe aigrelette. Bière correcte mais où la frontière de la collaboration reste trouble car l’ajout de HF est difficile à noter.

Brett and lime, slightly horsey. Cloudy, amber, medium head. Tangy, lemon flavor. Lime finish. Very clean, well balanced. Fantome is really hot and cold for me, but this was solid.

Still pour reveals a few bubbles quickly receding to the edge atop a lightly hazy, deep orange-amber body.
Punchy sourness in the nose has notes of yogurt, pine? and smoked paprika along with a light citrus undercurrent. What in the world? It’s almost like a Sahti, with the light smoke and lactic notes. Some sweetness creeps in there as it warms; sweet, bready medium malts but still enough acidicy and lemony-like citrus to keep it fairly well balanced. No alcohol or flaws noted. Medium strength of aroma, no doubt lessened by the lack of carbonation.
A burst of sweet and sour upon first sipping, which is very full in the mouth and as the dust settles, smoke phenols mix with lightly sweet caramel malts growing sweet and strong, only to be washed away by an aceto-lactic acidity that is bright and refreshing. Again, very Sahti-like in the flavor and even despite it’s slick, oily mouthfeel and near complete lack of carbonation (there is just a touch, thankfully), the smoke phenols are so well-integrated and the acidity keeps the palate clear enough that I can’t be but deeply intrigued. As is, I had no problem drinking it and continued to enjoy it more and more as the bottle warmed and wore on. Plenty of complexity, with definite herb undertones and all the Fantome funk you could ask for.
If this had carbonated, it seems like it would be in the high 4s. You never know, though. Hard to tell what something would taste like under completely different conditions.

Bottle 750ml. [ As Fantôme / Hill Farmstead 5 Sciences Beer ].Light unclear medium orange color with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate to heavy yeasty, saison yeast, herbs, flowers, funk notes. Flavour is moderate to heavy sweet with a long duration, candy, spicy - herbs, lemon - citrus. Body is medium, texture is oily to watery, carbonation is soft. [20140118]

Bottle@Yespr’s - fuzzy golden pour with small white head. Sweet fruity and malty, some lemon, grassy, barnyard fruit notes, slightly herbal, with a dry finish.

Bottle at Yespr’s. It pours pale golden with a small white head. The nose is doughy, hay, straw, mild spice, floral, dried grass and citrus peel. The taste is crisp, mild tartness, lemon, dough, soft fruitiness, grass, floral and some bitterness with a dry finish. Medium body and moderate carbonation. Pretty drinkable stuff, but a expected a bit more from these guys.

Sample from 75 cl. bottle. Hazy, golden colour with a small, white head. Sweet aroma with spices, fruits, caramel malts, yeasts, a hint of booze. Medium body, lively carbonation. Finishes yeasty with fruits, citrus and caramel malts. Excellent Saison.

Bottled. An unclear golden beer with a thin beige head. The aroma has notes of lemons, straw, brettanomyces, and straw. The flavor is sweet with notes of malt, lemons, citrus fruits, dusty hops, as well as a bit of brettanomyces, leading to a tart finish.
