We’re laying down a funky beat. Four beats, to be precise. It’s our Elements of Funk series, designed to showcase the similarities and differences between four strains of Brettanomyces, which the cool kids call “brett”. To accomplish this, we started with a base beer that took inspiration from Saison de Lente, using a fairly simple malt bill, noble hops and familiar house yeast to leave the path to funk as unobstructed as possible. Following the base beer’s fermentation in stainless steel, we then sent one quarter of it to the brite tank at a time. Each quarter was inoculated and separately bottled with a different strain of Brettanomyces: lambicus, drei, claussenii and brux. While all four variants appear similar to the naked eye, the nuances are many.

This release features the Brettanomyces Lambicus strain.

750ml bottle pours out hazy golden topped with a white fizzy head. Nose is more fruit then the others some funky oak also. Taste is more of the light fruit mix oak funk and citrus brett.

Bottle shared. Pours hazy orangey brown with large fluffy white head. Aromas of brett, hops, light malty, oranges, citrus. Taste is bitter, bretty, oranges, earthy malty notes.

Bottle thanks to William. Pours a hazy orange gold with large frothy spotty white head. The aroma is strong oak, berry, lemon, brett, grape. Slick body, lemon, grape, berry, oak, dry finish, very good.

Lightly hazy, soft, orange-hued peach-golden with a huge, Brett-induced, white head showing moderately-strong retention.
Strong pepper at first shows a good phenolic character that encourages notes of lavender, crabapple and tart cherry to further dry out the nose. It’s surprisingly floral, with light biscuity malt behind it and doesn’t really have any expected/hoped for deep funk. No sulfur, horse manure, cherry pie; that sort of thing. But that’s ok, it’s mild, well-aged and the Brett hasn’t been overworked, at least (no heavy bread, acid, perfume).
Similar in the mouth, with a huge, tight, natural carbonation and well-attenuated malt base that provides dry biscuit and cracker with a touch of cake-like sweetness on the finish. Again the pepper and floral aspects are strong here, with rich but not-overdone phenolic and ester character bordering on a light soapiness. Honey-like malts emerge with breathing and warming. Quite mild and competent, though again, would love some deeper funk.

750 ml. Cloudy orange in color with a small thin head. The aroma has some toasted grain, pears, fuzzy apricot skins.

The flavor is lightly funky yeast, soured / rotten fruits, with a mild moldy basement finish. Not a saison basement character, more a mold. But not moldy cheese. The body is medium with a lightly tart finish. Actually much better than I was guessing.

Poured from bottle thanks AdamChandler nice bright orange color with a thick foamy white head. Aromas of light fruit grapes and brett. Taste is nice slightly sweet with some notes of apricots and floral tones.

75CL from RS last year. very dark golden orange 1 finger head. This smells fantastic! orange peel, clove, peach, oranges, funky cheese and leather. Taste is very similar. a little more sweetness. oranges, pepper, sweet finish with a little rubber flavor.

Bottle, bit of a gusher on opening. Pours clear golden, large creamy off-white head, dissipates slowly, good lacing. Aroma is dry, dusty, hints of fruit, grapes, Brett. Flavor has a hint of sweetness, light funk, very dusty with a bit of a white grape undertone. Medium body, high carbonation. Lingering bitterness, actually fairly prominent, that seems out of place.

Poured from a 750 ml bottle. Aroma is rather fruity, with an interesting floral, spicy note that is kind of like a candied, spiced red apple. Light earthy, herbal notes. Moderate pineapple, cherry pie and citrus notes with hints of stone fruit skins. Phenolics are very light with no plastic or medicinal character at all. Pours a hazy, dull golden color with a very large, moderately thick, frothy, white head that recedes slowly but steadily. High lacing and faint legs. Flavor is slightly sweet with a medium light acidity. Light grain notes. Quite fruity with tropical fruit, stone fruit and red apples. Hints of phenolics with a light herbal note. Some light oak. Really not much funk, but there is a light earthy note. Mouthfeel is medium bodied with high carbonation. Low astringency and low alcohol warmth. Overall, an alright beer but it doesn’t have the funk I was expecting. Decent fruit notes and the phenolics were light, but a bit boring and overcarbed. I wish these weren’t so carbonated as I would like to hold onto them for a year or so and see how they change, but I don’t have that luxury.
