Channel Ocho is an extra-strong dark ale, judiciously spiced with chipotle peppers, cinnamon and cloves for a mild heat that tickles the tongue, and a warmth that lingers after sipping.
History & Style
Inspired by a recipe for Mexican hot chocolate, Channel Ocho is born of brewer Brian’s nostalgia for Mexican cooking. It is strong and dark, with Abbey Ale yeast imparting natural peppery, spicy character, intriguing earthiness, and some fruit notes. Organic whole chipotle peppers, cinnamon sticks, and whole cloves add heat and complexity to this unfiltered ale.
INGREDIENTS: Local Spring Water, Organic Barley Malts, Organic Hops, Organic Cane Sugar, Organic Cocoa Nibs, Organic Cocoa Powder, Organic Whole Chipotle Peppers, Organic Cinnamon Sticks, Oganic Whole Cloves, Abbey Ale Yeast.
MALTS: Pilsner, munich, caraaroma, chocolate (all organic)
HOPS: Organic perle
YEAST: Hefeweizen Yeast

600ml bottle. Black pour, small mocha head. Aroma of slightly sweet, roasty malts, chalky with touches of subtle spicing and some light fruity esters.
Mouth feel is think, very lager like. Carbonation is firm, but soft. The finish is lightly bitter with some subtle warming from the chipotle. There are slight cocoa notes, but really the chipotle is very faimt, no smokiness, and the cocoa and spoces are quite muted.

650mL bottle, pours a deep dark reddish brown with a small beige head. Aroma brings out rather spicy chipotle peppers, with some toasted malt, and some bready notes. Flavour is quite spicy, with lots of very spicy chipotle peppers upfront, followed by medium toasted malt. Very spicy, with the chipotle being very apparent. Decent.

Light brown, with a bit of thin head. The nose is a bit spicy, just a touch of cinnamon, maybe clove. On the palate, it's harsh, it's thin...if there's good there, I'm not tasting it. Thin and bland.

Bottle: Poured a deep brown color ale with a nice light brown foamy head with OK retention. Aroma of lightly sweet caramel malt with light cinnamon and cloves notes. Taste is also dominated by some cinnamon and cloves notes with a medium dry caramel malt backbone. Body is about average with good carbonation. Good and interesting takes on Mexican spice beer but I would have preferred for the cinnamon and chipotle notes to be more prevalent.

Looks like cola with a dark brown colour and bubbly-foamy head that disappears quickly enough and not much lacing is left. Spicy nose with some chocolate malt and some hops that give out a little rusty water scent. The flavours are a different malt, with some smokiness instead of the chocolate. Mild spiciness lingers in the aftertaste, and this seems to hide the alcohol. The rest of the taste seems a little too watery though. Wish it had a bit more punch, but still worth trying. Interesting... like a spicy (hot) rauchbier.

A dark brown stout with a thin brown head. In aroma, a nice sweet fruity chocolate malt with licorice, cinnamon and chili powder. In mouth, a nice sweet fruity malt with light dark fruits, chili, coffee, sweet chocolate, licorice notes, very nice. On tap at brewery.
