2012 750mL bottle drunk 8/13/16 Soft, light mineral, light sulfur again. Bigger white and black pepper character in the nose with even some light lavender suggestions, perhaps. Definitely more wood and less intense rhubarb juice, which is odd, given the 4 year difference. Definitely not as evened out, as a result, but with very enjoyable aromatics and light brett and lacto lingering behind it all. No alcohol or flaw. Black pepper in the mouth with lots of mint-like character and soft, pleasant, vegetal notes from the rhubarb. Some sharpness from the wood, a touch like Crianza, adding both flavor and tannin/body. A touch of alcohol on the finish, mixing with dry, very bitter rhubarb juice. Tight carbonation. Earthy grapefruit rind and very light brett lingering. Obviously a bit bigger/fuller of a lambic all around than the 2008, but I’m sure given time this will probably be even more softly rich and juicy/flavorful than the 2008.

2008 750mL bottle drunk 8/13/16 Small, smattering of white head sits atop a rich, copper-golden body with light carbonation and high clarity. Ahhhh, finally some sulfur! I’m amazed we’ve gone 11 lambics with very little, if any, sulfur character in the nose (which I love). Add to that a very still-present, juicy rhubarb character and you’ve got quite the bizarre, ultra-funky lambic nose. The rhubarb is difficult to describe. Certainly there is that tart/acidic character present, but past that, I wouldn’t call it highly vegetal, or at least not in the bad sense of the word. There’s even some spiciness to it (light black/white pepper). Lactic acid lingering on the finish nicely, with soft minerality and lots of cellar-like mustiness to balance this lovely juicy rhubarb. No alcohol or flaw. Soft in the mouth, with light yet tight carbonation and lightly to moderately sweet honey-vanilla notes complementing the pureed rhubarb juiciness and light acetic character. Great depth of flavor, and the malt is matched perfectly to the both the bacteria and rhubarb acids. Long finish, very funky. Certainly wins most drinkable-yet-unique lambic of the day, though I still prefer the non-fruit/vegetable lambics at the tasting (and in general).

Bottle from Bierkoning, Amsterdam. 2018 vintage. Rhubarb infused aroma with barnyard funk, grass, tart fruits, grain, hay, citrus, soft herbal touch, wood, and lemon. Dry sour flavour, medium body. Beautiful rhubarb funk, nicely sour and dry, delicious.

Bottle, 2021. Bottled 16th of November 2021. Color: Slightly hazy golden, white head. Aroma: Funk, tart, fruity. Taste: Over moderate tart and light bitterness. Rural funk, fruity rhubarb. Earthy, floral, some minerals. Old hop, oak wood. Dry mouthfeel. Below average carbonation. Nice one.

Old rating from notes. Standard Cantillon aromas of horseblanket in the nose. the rhubarb is not particilarly noticeable but may contribute to the tartness. Yeast, dry and more barnyard in the finish.
