We’re laying down a funky beat. Four beats, to be precise. It’s our Elements of Funk series, designed to showcase the similarities and differences between four strains of brettanomyces, which the cool kids call “brett”. To accomplish this, we started with a base beer that took inspiration from Saison de Lente, using a fairly simple malt bill, noble hops and familiar house yeast to leave the path to funk as unobstructed as possible. Following the base beer’s fermentation in stainless steel, we then sent one quarter of it to the brite tank at a time. Each quarter was inoculated and separately bottled with a different strain of brettanomyces: lambicus, drei, claussenii and brux. While all four variants appear similar to the naked eye, the nuances are many.
Elements of Funk: Brettanomyces Drei exhibits a fruitier aroma than other members of its funky family with citrus and tropical flavors flirting amidst a tingly, expansive and dry mouthfeel.

750ml bottle pours out golden topped with a fizzy head. Nose is brett some light basement a little spice. Taste is more of the brett some wet wood and a little zest.

bottle. Pours mostly clear orange, medium off white head, good residual and lacing. Aroma is brett, dust, a bit floral, grass, basement, hay. Flavor is bone dry, medium funk, bretty. Medium body, soft carbonation.

Bottle thanks to Will. Pours a cloudy orange good with large frothy off white head that lasts. The aroma is funk, oak, apple skin. Medium mouth, brett, funky, lingering dryness, very good.

On tap at the Bruery. It pours a hazy light orange color with a creamy white head. The aroma is kinda herbal with some parsley, celery salt and light notes of pear and hay-like funk. The flavor is better with notes of soft cobweb funk, pear fruit and very light acidity with some balancing earthy bitterness. Very soft mouthfeel. Liked the flavor way better than the aroma.

Tap room - Tart and funky apple notes. Clear gold with a decent white head. Funky apple and some bitterness. Interesting.

Poured from a bottle. Aroma is very Brett forward. Lots of cherry pie, pineapple and lighter citrus notes. Hints of acidity. Moderate grassy notes with a medium light spicy phenolic notes. Careful, this one is a bit of a gusher. Pours a cloudy, golden orange with a very large, frothy, white head that slowly recedes. Moderately high lacing and faint legs. Flavor is slightly sweet upfront with a bit of cracker and caramel notes. Some light pineapple and citrus notes with a hint of acidity. Moderately strong bitterness with some grassy notes. Moderate phenolic notes with a spicy character but bordering on plastic as well. Bitterness seems to be accentuated by the phenolic and dry finish. Mouthfeel is medium bodied with high carbonation. Low, but present astringency and low alcohol warmth. Overall, I liked the aroma quite a bit, but the flavor has a weird finish that isn’t great. You adjust to the weird finish, but its not great. Flavor doesn’t have the nice, strong fruit notes that the aroma had either. I really am not a fan of the phenolics in the flavor.

A hazed golden ale with a thin white head. In aroma, sweet fruity malt with light cherry notes, light Brett, tropical fruit, very nice. In mouth, a nice sweet fruity malt with light corky notes, light Brett, light lactic notes, leather, very nice. On tap at Placentia location.

750 ml bottle from the RS, thanks to our trustee for sending, AdamC for the purchase. Bright gold with full bubbly head. Aroma is fruity with Brett, notes of shoe leather. Musty hints.
The flavor is nice fresh Brett, no sourness or tartness whatsoever. Fruity and lasting oak in the finish. This is drinking really well. Very easy to drink, nice oak element.

75CL bottle, This is a hazy burnt orange color with bits of brown. a huge 3 finger yellowish-white head. Smells great. Incredibly dry, some funky lemon zest, peach skin and oak. it smells so similar to saison de lent, it’s not even funny. The mouthfeel is very thin. There’s mango and pineapple at the finish with bitterness and oak tannins. Crisp piney taste up front. a little bit of honey. lots going on and a very good sipper. Love this.
