Soak: our line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We place a base brew crafted with 60% wheat grist in 600L oak puncheons for 3 months with fermentation duties shared gracefully between lactobacillus and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the barrels to “soak” for enhanced extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share.

Vibrant gold in appearance with light haze, Apricot Soak has an aroma of dried stone fruits with a lively herbaceous character. Notes of tart, under-ripe apricot and lemon peel burst on the palate with a re-enforced tannic structure, a subtle wheat grain backbone, and undertones of wet oak. Features a semisweet finish with a refreshing champagne-like carbonation.

No head left, veiled ochre beer. Fruity nose, raw grains, wholemeal bread, peach, apricot. Sour, lactic flavour with fruitacids, sour grapes, roasted peach if that makes sense. Sharp, acidburn, dry-out effect and lean character, not much carbonation. Too sharp, good flavours... air connu. Txs to M&L!

Lots of sharp, tangy apricot. Pours murky orange with good head and lacing. Lime and grapefruit. A little acidic on finish. Tap at brewery.

33cl bottle pours a murky, apricot gold with some white head. Nose is very sour with acid and pomegranate vinegar, raw stone fruits, kumquat. Flavor is very tart, lots of lemon acid and vinegar, kumquat. Tart finish.

Sample during the "New England Beer & Food Tasting" on 07/14/2018. Hazy yellow-gold color with a medium white head that recedes steadily to an outer ring. Partial rings of lacing. Aroma of funky yeast, oak, fruit and malt. Light to medium body with flavors of tart apricot, oak, mildly funky yeast and doughy malt. The finish is lingering tart stone fruits and yeast. Good beer all around.

Bottled 5/31, drunk 9/24/18.
Clear apricot-golden. Massive protein break chunkifying the beer despite my best efforts. No head.
Awesome nose reminiscent of plum and blueberry soak. Fruit is lightly juicy but also highly attenuated showing tons of apricot jelly with plentiful stone fruit-like minerality. Lovely.
Tart and increasingly puckering with spritzy, somewhat prickly and too high initially, carbonation leading through juicy apricot and acidity. Ends puckering and dry with rustic grain lending cracker and biscuit. Soft, malty and supple texture with low, but lightly noted oak nuances. None of the sweetness or strange oak-and-acid blend of Super Soak and Fated Farmer. Nice and dry, lower abv, better attenuation and elegant fruit flavors. Man have I missed the soaks. Lactic acidity is moderate with light Brett and no acetic. The funky stone fruit, apricot jam aromatics are just killer here.

Many thanks! Sampled 330 ml. bottle. Orange hazy, little white head. Nose is vinegar stone fruit, puckering,.. Quite sour, big chalky but nice puckering acidic apricot, lemon, lactic.

Bottle during share; hazy golden yellow pour with a big bubbly white head, aroma has funky apricot, taste has some woody action, some apricot, citrus, ok

330 ml bottle. Aroma is tart apricot, oak, slight funk. Flavor is very tart. Fresh fuzzy apricots, mild oak, mild funk, slight lacto tartness in the finish. Plenty of good fruit character. Nice.

Pours hazy gold into a tulip. Bright white head with excellent retention recedes to hug rim. Apricot and funk aromas. Sharp with tart apricot and lemon upfront turning to aspirin in the dry lacto finish.
