Biere de raisin - This beer is the marriage between dry saison and the Chasselas grapes found in the heart of Swiss Romande. For this hybrid beer, we used grapes from our friends, the 4th generation winemakers of Domaine de Boulaz in Bonvillars on the Southwestern shore of the Lake Neuchatel. This beer is our invitation to gather with friends and family to share a good bottle. Naturally bottle conditioned, unfiltered, and unpasteurized.

Very short-lived white head, reduced to rim over fully veiled yellow beer. Blast of sulphur upon opening, followed by a sourish-sulphury aroma, lactic, and a faint impression of phenols. Fresh sour, lactic & lemony, just again a bit of phenols and - much reduced - sulphur. Sourness eventually gets pretty mild, if dominant. Not very vinous, in fact, despite the grapes. Serious dry-out effect, all the same, acidthinning; feels well-carbonated. I would have expected more wine-like features. But in the end this is a true sour. 7/4/8/3/16

On tap @Luppolo Station (Rome). Dorata, torbida, schiuma bianca media, discretamente persistente. Al naso una nota di zolfo che pian piano si attenua, carattere vinoso (vino naturale), uva, mela annurca. In bocca ha una bella acidità con note minerali, citrica, succosa, un po' spigolosa. Corpo medio, carbonazione media. Molto interessante.

Thank you for sharing tderoeck & Rubin77. 375 ml. bottle sampled @ LIBF 2017. Golden orange, clear. Nose is soapy, perfume, spice apple. Taste is apple, spice, raisin I suppose but also watery, weak, perfume. Expected more from Trois Dames.

Clear golden yellow beer, small creamy white head, dissipates immediately, non adhesive. Aroma: very acidic, lots of vinegar, lemon juice, malty, grains, some cow fodder. MF: soft carbon, medium body. Taste: fruity start, lots of lemon juice, acidic, some vinegar. Aftertaste: funky, peppery, some wood notes, overripe fruits, lemony acidic.

Raisin beer brewed in Switzerland by an American craft brewer, tasted from a bottle at Leuven Innovation Beer Festival. Bubbly and very loosely structured, egg-white head, almost immediately reduced to as good as nothing, hazy straw-yellow blonde colour. Aroma suffered from quite a lot of stinky, sulfuric H2S (rotting eggs, sewer water), mixed with more flattering impressions of sour grapes, lime peel, unripe plum, sourdough, lemon cake, very dry white wine - but raisins to me are all but unnoticeable. Crisp, sour onset, only very vague raisiny sweetness, grape- and gooseberry-like fruitiness, drying lactic yoghurty acidity but in a relatively mellow, refreshing way, over a soft bready malt soil; lemon zest-like aspects, but alas the H2S returns retronasally, quite ruining it for me. I'm sure this can be executed better (as the brewer himself acknowledged as well) and if the sulfuric stench can be avoided, this can become a fine, crisp, refreshing and easy-drinking sour ale.

Bottle @ Leuven Innovation Beer Festival. Clear golden with a white head. Aroma is sweet, malty, heavy wood and grapes. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 140418
