Pigs Ear after party at Chez Smith. Light haze on this deep amber beer, small pale tan head. Light palate, fairly dry, decent fine carbonation. Thin malts bring a trace of creamy sweetness. A little wood. Light but rich bourbon soaked fruits with ripe fruits underneath. Finishes light with further good tangy bourbon fruits. Nice, very light and drinkable.

330ml bottle sourced online from the brewery. Pours clear deep brown with an off white head. Aroma: caramel, toffee, vanilla, vinous oaky barrel. Taste: moderate sweet, slightly sour, very light balsamic, caramel, toffee, oak, vanilla, prunes, plums, dark berries, figs. Medium to full bodied, soft carb, rich woody finish. Enjoyed this, I regret not buying more to age

Bottle at home from the Fullers website. Opening the bottle gave me a huge waft of sourness that left me thinking I had wasted my money. A perfect pour with a deep brown colour and a lasting head. This beer is seriously good with a beautifully integrated sweet and sour flavour and a gorgeous mouthfeel. I keep coming back to that balance between sweet and sour; vanilla from the oak and bourbon against a gentle and impeccably integrated sourness. I forced myself to take small sips so I didn't guzzle it. This is one of the best beers I have had for a very, very long time. I want more, but they have sold out. Bugger, bugger, bugger!

Bottle picked up from Beer Revolution, Hay on Wye, Powys, Wales, consumed at home Monday 1st January 2018 whilst making Ox Cheeks in a Tomato Sauce and listening to Aldous Harding. Pours rich dark brown with fab clarity in fact looking again it has a very red hue. Lots of wood on the nose and with plenty of vanilla. Tart from the off but this is softened by the barrel ageing, it's still zippy, slightly balsamic, tangy berries, and has a complexity not too dissimilar to a Rodenbach, the woodiness is integral but I can't deny that I am a little bit disappointed, perhaps I should have aged it, not sure. Good but could be better. A7 A4 T7 P4 Ov14 3.6

Bottle split at Leighton's gaff, big thanks to Kenny, 05/12/17. Hazed light mahogany brown with a decent beige cap. Nose is toffee, spice, dried fruits, nuts, brown sugar, JD & Coke. Taste comprises mellow bourbon stained wood, spice, toffee, fruit loaf, dates, raisins. Medium plus body, fine carbonation, light booze in the close. Another OK sipper but a touch 1D and lacking some depth.
