Astrid is a bright golden color with assertive aromas of spice, bread crust, apple, and fennel seed. Citrus, oak, and anise give way to warm vanilla notes followed by a slightly tart finish.

We brew this saison with Pilsner, raw wheat, and Biscuit malt, and ferment it in stainless steel for a year with a blend of traditional saison yeast and Brettanomyces. After fermentation is complete, we transfer the beer to Scandinavian Aquavit barrels, where it ages for an additional eight months. Skål!

Bottle from HoTM. It pours clear bright gold with a thick, fluffy & lasting white head. The aroma is fresh and zingy, vanilla, apple, pear, melon, custard and crumble, sherbet, sour candy, sour apple chewits, rice pudding, vinous, white wine, gooseberry, gummy bears, hay, cream soda and funk. The taste is crisp, dry, puckering, zingy, tangy apple, apple skin,sour apple chewits, deep funk, barnyard, oak, hay, vinous, spice, sherbet, dry oak, nip of aquavit, sake, short lived alcohol smack gooseberry, creaminess and custard with a dry and funky finish. Medium body and moderate, fluffy carbonation. Plenty of depth, yet strikes a lovely balance. A classy number.

Bottle split at CBC Islington, belated Tipple 10K, thanks to the Leighton, 18/12/18. Hazed orange with a decent off white covering that dissipates edgeward in time. Nose is grass, lemon rind, straw, funk, pissy green berries. Taste comprises tangy fruits, light white peppery spice, grass, barnyard notes, funk, green berry tang, light yeast esters. Medium bodied, fine carbonation, semi drying close. Decent saison.

Bottle shared at Craft beer co Islington. 18/12/2018. Many thanks! A light hazed golden orange coloured pour with a fine white head. Aroma is sharp lemon, lacto sharp, pineapple, american sour, musty funk. Flavour is composed of lemon, earthy , lemon shurbert, citric acid. . Little green apple. Palates is semi sweet, sharp , highish carboantion. Nice funk.

Craft Islington Bottleshare. Thanks to Leighton. Light palate, semi dry, decent fine carbonation. Light malts. Mild brett. Smooth and semi sweet floralness. Little lemon sherbet. Funk. Savoury vibe. Smooth finish. Well joined up. Little white wine and vanilla. Well joined up.

Bottle shared at CBC Islington - picked up in the US. Pours unclear orange-gold with a creamy white head. Nice depth, some doughy wheat bread, oranges, some alcohol, yeast, biscuits. Medium to full bodied with fine carbonation. Sweet finish, lightly warming, salty, nips of melon, lemon meringue, dough, saison yeast. Great stuff.

375 c&c from Bruisin’ Ales. Pours hazy gold with a transient white head. Aroma is tart, citrus and an anise note. Med body or so. Flavor is mildly sour/Brett-horse blanket. Pretty dry. Gets some wood that’s not musty. Drinks nicely. Flavors are “moderate” but quite distinctive.

On tap at Tasty Beverages - Asheville, pours a hazy yellowish blonde with a medium white head. Aroma brings out wild yeast, oaky barrels, and tart stone fruits. Flavour doesn't really express the aquavit other than being oaky, with tart stone fruits and some light wild yeast. Complex and well-crafted. Very good.

Pour at State of Origin 2018. Herbal forward nose with lots of wood, biscuit malt, and wild herbs. Sweet and bitter on the palate with some dried citrus zest and pith..some mineral notes as it warms, with dillweed and light vinegar notes in the background. Very woody and forrest-like in someways. A tad heavy on the palate with a boozy finish. Interesting.

Tasty wild saison, full of tart citrus and bright green apple with oak, vanilla, and herbal notes underneath. Starts as a full-on sour assault, acidic and potent and lightly sweet, with a mild toasted bread backbone and a rising vinous sweetness on the back end. Grows boozy in the finish, with mild dill and mustard mixing with the minor woodsy bitterness. Slight bit of funk pops up in the fade, but we're mostly given a shitload of sour. Bread and chardonnay on the nose, while the pour is a slightly hazed yellow gold with a persistent white cap and moderate lacing. Boozy feel could use a little smoothing out, but otherwise a good pint.
