375mL bottle, pours a cloudy golden with a huge lingering white foamy head. Aroma brings out loads of yeast, farmhouse notes, and a little funk from the lambic. Flavour brings out tart dry fruits, Belgian yeast, and considerable funk that leaves a lingering dry tart finish. Extremely complex, yeasty and dry. The lambic addition is very well-done, without stealing the show. Lively carbonation, without being detracting from drinkability.

GUSHER ALERT!

Slightly hazy orange beer, creamy white fine head, stable, pretty adhesive. Aroma: very sour, infected, well, that explains the gushing I guess., some citrus, lots of spices, but in general just pretty nasty. MF: ok carbon, medium to light body. Taste: very sour start, citric, refreshing, fruity, bit chemical, solvents, more soft sourness. Aftertaste: sourish, spicy, pretty weird, chemical touch, little bitter, lemony finish. Ok, it's complex. I learned afterwards that it was made with Cantillon lambic. But that does not automatically make it a good beer.

Bottle - thanks KnobbyKnobby! Pours hazy golden butterscotch with a huge off-white head that is slowly disispating with nice, somewhat sticky, lacing. Aroma is funky, barnyard, lemon, yeast, horse blanket - very Cantillon. Flavor is the same, lightly sweet and only a light funk, lemon, floral. Dry finish. Light body, bubbly champagnelike carbonation. Quite nice and easy to drink - kind of like a starter gueuze.

12.7oz bottle. Unfiltered orange-tan body, steady creamy white head. Attractive slow champagne carbonation bubbles rising. Bigtime funky aroma, more earthy Saison than straight up sour. Medium bodied, very refreshing and enjoyable. Lemon-lime notes, some creamy yeast. Really enjoyable beverage.

Bottle, 11C. Slight gusher. Hazy gold with a white head. Aroma of apples, damp hay, stone and tropical fruit, lemon, pepper. Creamy, slightly slippery mouthfeel. Sweet, fruity and floral with grapes and pineapple, mellow funk, gently tart. Doesn’t finish dry which is a slight shame. But refreshing and engaging.

Der oxidierte Beginn ist hefig-säuerlich und leider etwas muffig. Laff, wenig aromatisch, trocken, mild. Ein recht flaches Bier, vielleicht schon zu alt. 9/7/7/6/11/7

Bottle (gusher). Tart lactic, musty funky barnyard aroma. Cloudy golden with a huge white head, suspended yeast sediment, nice lacing. TFunky barnyard, bready wheat, tart lactic, and light spicy flavor. Light dry finish. Very nice!

Bottle @ Scott’s Summer Saison tasting. Thanks so much Scott! Hazy golden yellow appearance with an off white head. Super funky, tart lemon citrusy, vanilla, coconut aroma. Big coconut, pineapple, lemon citrusy, vanilla, tart, yeasty flavor. Nice one!

Bottle from Domus Birrae. Clear, shiny gold with a medium, fine head. Funky nose, horse blanket, lemon zest, yogurt, leather, rounded, bready malts. Wonderfully complex. Dry lemony flavor, some funk, orange sweetness, some bread. Great balance. The Borgo flavor is overwhelmed a bit by the Cantillon, but who can complain about that! It is softer and less dry than the lambic straight. Very fruity, well sour, spicy, low funk level. Maybe a bit too sweet. Great!

10/05/2012 Open Baladin Roma (750ml bottle). Dorata, viva, intensa, abbastanza limpida, schiuma leggera bianca, poco persistente. Al naso sentori di lieviti da saison e spezie, malto, note di lambic (stalla, cantina, muffa). In bocca è acida, decisa, prima scontrosa, quindi pian piano si lascia apprezzare il mirabile equilibrio tra la Duchessa e il Lambic di Cantillon. Corpo medio, carbonazione decisa. Ottima.
