Imperial Stout Aged in Cognac Barrels

A fantastic intersection of oak, spirit character, and decadent stout — and a special release for our 10th Anniversary!

Returning for the first time since 2020, and the seventh time ever, BOYD is our Imperial Stout aged extensively in cognac barrels. It's feisty and warming, with low bitterness, appropriately mild carbonation, notes of anise, brown sugar, figs, and subtle maraschino cherry.

Draught@Moeder Lambic, Brussels. Black colour, mediumsized brown head. Aroma is liquorice, some fruits, mild chocolate, alcohol and some slight wooden notes as well. Flavour is very similar, with the liquorice, alcohol and sweetish wooden notes making a good and tasty base for it.

2014 vintage courtesy of Snuffy. Aroma is really barrel forward and somewhat boozy. Quite a bit of cognac with light oak. Moderate chocolate notes with some light roast. Pours black with a fairly thick, somewhat small, dark mocha head that recedes to a thin film in the middle and along the edges. No lacing and moderate legs. Flavor is somewhat roasty with some light caramel notes. Moderate dark chocolate. Light oak with moderate alcohol notes. Some moderately strong, but nice cognac character. A bit boozy. Some medium bitterness. Mouthfeel is medium full bodied with medium low carbonation. Medium low astringency and medium alcohol warmth. Overall, a big, boozy stout with a lot of cognac character. Decent malt notes, but the barrel character overwhelms.

2018-12-08, bottle at Black Christmas 2018, vintage 2018, 11.4% ABV, 7-4-8-4-15
Black colour. Cognac and spirit aroma. Full bodied, strong dark chocolate flavour, liquorice, salty, a bit boozy.
Doesn't come together very well, but it's bold.

Black color with small head. Smells like a primitive imperial stout, roasted malts and a lot of phenol, but wait till the taste to feel the huge phenol wave; there are hints of chocolate and tobacco, and the boozy barrel aging. Burning final.
Very messy and clumsy.

500mL bottle, sent from wilco (thanks a lot, Mike), pours black with a small beige head. Aroma brings out loads of cognac upfront, perfumey notes and booze. Flavour is really big and decadent, with loads of cognac upfront, some booze, and an oily slick palate. For a BA impie, it's all cognac with nothing else. Not overly complex. Finishes with a big alcohol, liqueur burn. Good stuff for what it is, but it's not elegant in any way.

250 ml. draft @ Chez Moeder Lambic Fontainas. Black, very dark brown, quickly fading to a small layer, very deep mocha coffee head. Nose is huge on big roasted malts, big umami & very big spirit quality, lots of boozy, spirit, cognac I suppose and oak. Taste is very bitter, big roasted malts, soy sauce that almost carries a brine quality, giving it an almost fish sauce note, heavy spirit / cognac / booze layered on top, after a while some bitter mocha ice cream qualities become apparent, bitter mocha, very big on the roast, bitter spirit, oak barrel, huge on the alcohol & spirit, intense lingering roast, aftertaste, lingers on & on, very much a sipper,… There are RIS that taste like candy for adults & there is the ones that taste heavy of umami / roast / spirits etc. I prefer the first kind & this one is of the second kin, as it warms up you do get some mocha ice cream sweetness but the bitter roast still heavily dominates your pallet. Very intense & a very slow sipper but not necessarily in the way that I prefer it but enjoyable & respectable all the same.

Bottle received from Winter Santa 2013/2014. Thank you pushkinwow! Pours viscous black with a rather thin dark mocha head that doesnät leave much trace while dissipating. Smell is malty with roasted malts, burnt caramel, vanilla fudge, dark chocolate, cognac, salty liquorice hard candy, dark roast coffee, charred wood, raisins and alcohol. Taste is sweet, bitter and malty with roasted malts, burnt caramel, toffee, burnt wood, cognac, hay, salty liquorice hard candy, moist soil, raisins, prunes, bitter chocolate, dark roast coffee, soot, resin and alcohol. Mouthfeel is soft, tiny oily, roasted astringent slightly boozy and near full bodied. Finish is tiny sweet, bitter and malty with roasted malts, dark roast coffee, bitter chocolate, cognac, burnt wood, soot and alcohol. Tasty…

Bottle split at Bruce’s tasting lab, from an IP trade with a Canadian fella on BA, 08/04/14. Pitch black with a good sized dirty tan head that thins to a covering and edgework. Nose is dark roast, restrained alcohol, cognac evident, bitter orange, hoppy wafts, bitter chocolate. Taste comprises dark chocolate, spice, roast malt, well tuned cognac BA in force, bitter orange peel, hoppy waistcoat. Full bodied, fine carbonaton, lightly warming booze at the close. Solid BA impy - lovely stuff!
