The traditional sour beer uses the wild yeast found around the farm. This gives the beer a soft, refreshing sour taste. After a year of aging on a barrel this beer is ready for consumption. Each batch of Zure van Tildonk is carefully aged in our cellars at the Engelburcht Monastery for several months prior to release.

Bottle 375ml. corked. [ As Zure van Tildonk 2014 ]. [ Vintage 2014 ]. Clear medium yellow color with a average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, tart, grapes, wood notes. Flavor is moderate sweet and light acidic with a average duration, tart, fruity, pale malt. Body is medium, texture is oily to watery, carbonation is soft. [20151121]

Bouteille 75cl, de et partagée avec Erwin. Orangé, léger trouble, col blanc fin. Arôme offre un nez léger rappelant un côté brett, impression de funk au lambic, retrait malté cara moyen. Palais est nettement plus agréable que la version 1 de cette bière. Effervescence bien là sans être trop agressive. Malt pâle cara, touche funk boisé modéré avec une note fruité purée d’abricot, impression de houblonnage à cru. L’ajout de lambic semble mettre cette bière sur une autre dimension plus agréable en bouche et au nez. N’empêche qu’"elle reste, cependant, pénalisée par un côté funk farmhouse américain.

Clear deep blond to orange beer, small irregular fizzy yellow head, unstable, non adhesive. Aroma: very fruity, lots of apricots, grains, funky touch. MF: ok carbon, medium body. Taste: very fruity, lots of orange peel, orange juice, bit sweet. Aftertaste: very fruity, bit spicy, some citrus, sweet, little bitter.

At Maakun’s, 33cl bottle, shared. Cloudy straw w/a white ring. Hay, grass, citrus fruity, peaches, dough, yoghurt, flowery. Sour w/fruity sweet backbone. Body is supple, thin w/low fizzy carbo that puts in a nice spike when swallowing.

33 cl bottle shared at home. Murky straw with almost pink hue and thin white head. Lots of funk, lactic notes, very fruity with lemon, gooseberries and star fruit. Light sour grains with some minerals, light chalk and plastic. Overal nice lactic and fruity notes, not unlike some lambic. Light sweet and under medium sour. Under medium bodied with soft carbonation and a bit slick and puckering feel. Decent.

Bottle @ Højbjerg tasting, my house. Medium head with medium duration. Color is golden. Aroma and taste are fruits, lactose acid, citrus, white wine and hops. Sour finish.
