The traditional sour beer uses the wild yeast found around the farm. This gives the beer a soft, refreshing sour taste. After a year of aging on a barrel this beer is ready for consumption. Each batch of Zure van Tildonk is carefully aged in our cellars at the Engelburcht Monastery for several months prior to release.

Bottle @ Aarhus tasting. Clear golden with a small white head. Aroma is sweet, malty, fruity and barnyard. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 211115

12.7 oz bottle shared by Eric S. 7-2017. First pour is mostly clear gold. Aroma is malty and sweetness balanced with some funk yeast.
Good amount of malt upfront with the balance with the tartness in the finish. Lemon tartness. Light traces of oak. Medium body with a mostly dry texture.

750 ml bottle into tulip glass, bottled in late 2014. Pours slightly hazy bright golden yellow color with a 1-2 finger fairly dense white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of tart lemon, lime, green apple, white grape, hay, straw, grass, cracker, bread, leather, pepper, oak, light vinegar/funk, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/acidic/spicy yeast, oak, and pale malt notes; with good strength. Taste of tart lemon, lime, green apple, white grape, hay, straw, grass, cracker, bread, leather, pepper, oak, light vinegar/funk, and herbal/yeast earthiness. Moderate amount of herbal/yeast spiciness and light earthy tartness on the finish; with lingering notes of tart lemon, lime, green apple, white grape, hay, straw, grass, pepper, oak, and herbal/yeast earthiness on the finish for a short bit. Very nice complexity, robustness, and balance of fruity/acidic/spicy yeast, pale malt, and oak barrel flavors; with a great malt/tartness/spiciness balance and zero cloying flavors after the finish. Moderate amount of dryness after the finish as well. Medium-high carbonation and medium body; with very smooth, moderately crisp, and lightly acidic mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this a damn nice unblended lambic style. All around great complexity, robustness, and balance of fruity/acidic/spicy yeast, pale malt, and oak barrel flavors; and very smooth and crisp to drink with the balanced acidity and elevated carbonation. A very enjoyable offering.

Sampled at Vill & Syrlig. Unclear orange body with a lacing white head. Aroma is fruity with some malt. Nice flavor of acidic berries, some malt, fruit and mild funk. Medium body and dry aftertaste. Nice and pleasent without being extraordinary.

2015 75 cl-flaska från SB. Fin snäll, mjukt syrlig lambikliknande karaktär. Laktosyrlig, syralig äpplen, druvor, lite omogen gul frukt typ persikor, lite hö, trä, fat, aningen funk. Riktigt trevlig.
