NONNIVERSAIRE, rewarded with multiple medals on international beer competitions!
A limited availability barley wine, brewed with 6 different malts, underwent primary fermentation with a typical abbey ale yeast. The second fermentation occurred with champagne yeast and then the beer was matured for 4,5 months on oak calvados barrels to deploy its intense and unique aromas.
After the aging process, it gots a third refermentation in the bottle, again with champagne yeast, for 2 months.
An excellent and unique digestive beer, perfect for sharing!

Bottled. Ambery brown colour, mediumsized white head, which leaves some lace. Aroma is sweet malts, mild calvados, apple, some spices and mild wooden notes. Flavour is wooden, some apple, mild sweet malts, spices and some yeasty tones. A bit warming and burning alcohol in the flavour too.

Bottle. Color: Dark copper to ruby, very thin beige head, Aroma: Toffee, dark fruit, raisins, subtle apple / Calvados. Taste: Sweetish, sticky, toffee, caramel, dark fruit and raisins, fruity and boozy Calvados (apple), hints of oak wood. Medium sweet, light to moderate bitterness, very lightly tart (sour apple). Sugary, sirupy. Very low carbonation, over medium body. Dry-ish and sticky finish. Nice but a bit too sweet (in my opinion) slow sipper.

Bottle picked up from Belgiuiminabox, Antwerp, Belgium. Consumed at home Friday 7th May 2021 watching a film on Netflix, we had a prawn curry and a lamb curry for tea. Pours reddy/brown with an off white head. This is a big, full bodied beer, but first impressions are super sweet, really a sweet bomb, some dark dried fruits on nose and in the mouth, raisins, some caramel, malt. The calvados touch is there adding a light oakiness to the aroma. It's ok but ultimately far too sweet for me.

Clear deep amber beer, small pale tan head. Nose is nicely toffee apple. Smooth and slightly soft palate, reasonable fine carbonation. Smooth toffee caramel malts, rich and yet quite light. Some Port Wine berries on offer and well integrated. Soft calvados provides another dimension, some apple stands alone but also that lovely toffee apple vibe carries over from the nose. Smooth finish brings everything together. Super duper! Smooth and rich with great depth of flavour but still dangerously drinkable. Lovely lovely stuff.

500ml bottle. Clear, reddis, chestnut colour, some off-white bubbles on top. Sweet-ish malty and minimally woody, fruity aroma, hints of caramel, oak, baked apple, calvados, a touch of plum, plum butter. Taste is sweet, sugary, caramel malty, slightly fruity, hints of baked apple, honey, caramel, candied apple, plum, plum butter, calvados, some alcohol; full body, viscous texture, smooth and soft, minimally sticky palate, soft to flat carbonation.

Bottle (thanks rask0linkov). Pours dark amber. Aroma is sweet, caramel, candy, booze, malt. Flavor is sweet and bitter, caramel, malt, sour, oak. Finish has slight sourness, oak, booze. Overall: okish, feels like needs more fermenting.
