Sampled @ Kerstbierfestival Essen 2013. Opaque brown to black color with a deep dark red glow coming through, small beige head. Smell and taste malts, lots of herbs and spices, sweetish. Herbal finish. Not my thing.

modeste 2013 pours fuzzy, amber/brown . small white head. smells sweet, sugar, grains, low carbo . sweet, bit caramel, very earthy yet somewhat ’ chemical’ . weird !

Sampled draft 15 cl.@ Modeste 2013. Murky brown, tanned head. Nose shows the infection, this is infected like all Pakhuis beers. Med. sourness in the nose, fermenting, lightly sour fruits, tart malts coupled with some sweeter malts, bitter herbs & faint spices. Taste is dull dark malts, sweet, BE yeast coupled with some light sour malts, the infection, brown sugar, caramel, sour red fruits in the back, light bitterness & very, very faint vinegar. Fuller esp. for ABV body & near flat. Infection is not that bad & heavier presence of malts masks most of it. Drinkable for ‘t Pakhuis but very dull & not very good.

Draught Huge yellow-cream head, very stable over muddy brown beer. Spicy - pine, lavender, resin. Overspiced. Taste is the same as the above, with a sweet background. Gives some balance, but stresses the voluntary "X-mas" flavour. Well-bodied (!) and quite slick, alcoholwarming. It would do well with a venisonroast with rosemary sauce, but in itself, it’s something I won’t drink on a whim..

Note: The Best Before Date had manually been changed from 15 Februari to 15 March. Good thing I'm not afraid of beer "gone bad", but still questionable if you ask me.
Clear brown beer, little white head, unstable and non adhesive. Aroma: yeast, spices (cinnamon), sweet caramel, fruity. Very christmassy aroma. Taste: caramel, spices (cloves), dried fruit, somewhat sweet but not cloying. Aftertaste: some hops, pices, citrus, chocolate or mocha.

(Draught at the brewpub - ABV 7.2 %) The beer poured dark brown and almost clear. Its head was medium sized and white. Aroma had malts, yeast and spices. Palate was full bodied and dryish with medium carbonation. Flavours were malts, spices, black pepper, sweetness, mildly hops and medium bitterness. Aftertaste was dry and malty.

Bottle 2010 version at Kerstbier Festival, Essen, Belgique, 19.12.10 This pours with excellent clarity, mid brown yellowing at the edges with off-white head. Really nutty and also fruity beer beer, soft carbonation in the mouth, some lingering sweetness. Fine but nothing special. A6 A4 T6 P3 Ov12 3.1

Bottle 100cl. w. swing top @ home.Alc. 6.5%. Clear medium amber color with a large, frothy to creamy, good lacing, mostly lasting, light beige head. Aroma is moderate malty, caramel, light butter and vinegar. Flavor is moderate to heavy acrid caramel sweet, light to moderate acidic and moderate burnt caramel bitter with a long to average duration, light to moderate vinegar, sour notes. Body is medium, texture is oily and sticky, carbonation is soft. There is clearly something gone wrong, but it is actually not bad despite the acidity. 1 L siphon, Kerstbier Festival 2009. Pours clear and golden orange with a small white head. Aroma is spiced, light malt presence. Fruity, light phenolic and rather sweet flavoured. Lingering sweet into the finish with a light reappearing fruity note.
