Noir du Fermier is a dark farmhouse ale in which the robust, yet dry malt bill is balanced with the brightness, depth and rustic character of the wild Brettanomyces and Lactobacillus found on our family's Missouri farm. This farmhouse ale was fermented in and aged in red wine and bourbon barrels for several months before being naturally conditioned in the bottle.

Wineglass showing pitch black with half a finger of latte colored foam.
The nose shows moderately intense notes of roasted malts with light oak.
The palate is well carbonated and medium bodied. Moderately tart with light flavors roasted malts and a mild espresso finish.

750mL bottle, 10 Year, drunk at Stout Week line share, 2/18/24. Dark chocolate, good clarity, robust beige head. Nose is tart, lightly chocolatey with heavy fruitiness of cherry and apple. Good Brett and only moderate lactic with just a hint of acetic. Surprisingly restrained, for Side Project, this could be a dark malt and bacteria sourness bomb but instead it has rounded chocolate, fruity cherry, moderately deep malts and just a really interesting interplay of dark malt, wood, base malt and Sacch. The fermier are definitely a standout series.

Pours dark, murkey brown. No real head. Smell is tart, sharp, mildly roasted. Taste is sharp and tart, roasted, coffee, liquorice, burnt chocolate. Tartness is mostly lactic. Some dark fruit notes ( mildly ) . Soy sauce like ending ( mild) A decent beer, but not my prefered taste category.

Bottle shared at Lucky Bamboo share. Pours a deep brown to black with a finger of off-white head that lingers. Red currant, cherry and plum aromas on the nose with oak and vanilla as it warms. Creamy on the palate with loads of oak and light tannins. Smooth with good balance between the base and the barrel. Smooth with more lingering fruit flesh and skin. Some yogurt-like character that is pleasant as well.

Bottle, by way of a trade that went tits up, with B3shine. Cheers Beau. Dark, clear, cola brown. Thin, dense, lasting, beige head. Good looker. Nose has red wine dregs. Old oak. Lemony brett. Hint of blackcurrant. Touch of vanilla. Taste is tart, juicy, and a tad dry. Medium body. Foamy carbonation. Juicy and tart finish. Fresh and bretty with nice red wine character, but the bourbon is lost on me.
