Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and blends. This 11th version features a range of plum(-like) fruit macerations. About 60 years ago, there were more than 200 ancient plum varieties in and
around Belgium, now almost extinct. The ambition is to track down and experiment with such old local varieties and have them grown again with local farmers and enthusiasts.

Last summer, one of our local owners of Schaarbeekse sour cherry trees, brought in 15 kilos of Mirabelle plums that we macerated on a small stainless-steel tank. We macerated these fragrant plums for almost 6 months and blended it with some young lambic to push the fruit lambic to a wonderful geuze-alike lambic beer. The lambics used came from two different barrels and four different brews. Final fruit intensity is 240 grams of plums per liter of Pruim.

Pours unclear, darker blonde. Smell is very full, fruity. Taste is sharp, tart, mildly acidic. Dry, oaky, intense beer troughout. A certain earthy touch as well.

Another plum lambic in this endearing and dynamic Spelingen van het Lot series - or rather, mirabelle plum, which is technically not a real plum but a different, albeit closely related plant species. This Spelingen series is not just about lambic experiments, it also bears a whole cultural dimension, in highlighting and reintroducing old local fruit varieties that are hardly ever cultivated anymore - yet another reason to remain in ongoing fascination about what they are doing at 3 Fonteinen these days. This one was limited to only 50 bottles and must therefore be among the rarest of them all. Snow white, creamy and dense, stable head on a cloudy peach blonde robe with somewhat khaki-like tinge. Infinitely fruity aroma, a basket of ripe autumn fruit, ripe yellow mirabelle plums and lots of them, ripe apricot, pineapple, sour grape, cooked pear, green apple, lemon juice, white wine, minerals. Very expressively fruity onset, tons of ripe mirabelle, juicy, fleshy and mildly tart, the latter element playing interestingly with the lambic's own tartness and astringency, reminiscent of raw pineapple and unripe pear; fizzy carbonation, supple body, tad vinous. Bready core under a megastructure of mirabelle plum fleshiness and juiciness, with an acidic lemony effect at its sides; astringent fruit peel and plum kernel effects tie up with some tannic woodiness in the end, creating a bone dry, but ever-lasting, perfectly balanced finish. Fantastic fruit lambic by 3 Fonteinen - once again. Long live the mirabelle plum, something I thought I would never encounter again after having eaten them a long time ago at my grandmother's place in my early childhood.

5/IX/20 - 75cl bottle @ 3 Fonteinen Lambik-o-Droom (Lot, BE), BB: n/a (no label, nothing on the bottle, they could’ve sold us literally anything...) (2020-865) Thanks to ElManana+1 for driving and sharing today’s beers, thanks to the Ghent Beer Posse for sharing the 3F bottles!

Cloudy orange blond beer, small creamy off-white head, little stable, non adhesive. Aroma: lovely, floral notes, fruity touch, bit yeasty, apricots and other fruits. MF: lively carbon, medium body. Taste: lots of apricots, fruity, some berries, soft bitterness. Aftertaste: very fruity, dry, dusty, apricots, some tannins, more fruits, some tropical fruits, very nice stuff, lovely!
