Locuste is the barrel aged version of our Sour Gruit: Criquet. It stayed for several months in white wine barrels which with the conjugated efforts of the wild yeast we added, mellowed the base beer and gave it more complexity.

2nd July 2023 Mildly hazy yellow gold beer, thin white head, very short lived. Palate is light and dry, a good fine crispness. Tart lemon and a little lemon sherbet. The white wine barrelling adds another dimension and the oak barrel provides a modicum of vanilla that becomes more obvious towards the finish. Whisper of herb but the barrelling seems to have masked the core Fruity character. Finishes dry and tart. Refreshing. About as sour as I want a beer to be. Mildly puckery but no acid. Good stuff.

Batch 2. Light hazy blond colour, white foam. Nose of lemon, vinegar, wine. Taste is very acetic, vinegar. Some interesting herbal notes but too sour. Almost undrinkable.

On tap at Moeder Lambic Fontainas. Hazy orange with medium white head. Fruity, lemon, spicy, juicy. Bit vinous. Medium to heavy sourness. Nice one.

Aus der Flasche (bbe 21.09.2021 ) im 2021-06 getrunken. Dies hell goldene Gruit kommt mit einer deutlichen Citrusnote daher. Am Gaumen ist die Säure moderat und auch das Citrusaroma sehr gut balanciert mit leichten Hefearoma. Auch hier hat La Source ein tolles Sommer Bier gebraut.

27/II/21 - 37.5cl bottle from Geers (Oostakker), shared @ home, BB: 21/IX/21 (2021-166)

Clear gold yellow beer, small dense creamy white head, pretty stable, bit adhesive. Aroma: funky, lots of brett, white grapes, barnyard, pretty floral, elder flower, mainly citrus notes though. MF: soft carbon, medium body. Taste: floral start, nice acidity, lemony, white wine, quite some tannins, tangerines, slightly sweet impression, some dried orange peel. Aftertaste: little spicy, dry, white wine, bit dusty, orange peel, peppery touch, nice acidity, orange blossom, slightly fruity, some brett notes. Very good one!

Paired with a lightly smoked hake fillet and grilled savoy cabbage, roasted beetroots with buttermilk (take-out from Røk BBQ). Extremely good pairing!

37,5cl bottle from Etre Gourmet web shop. F: thin, white, quick gone. C: pale gold, hazy. A: sour fruity, woody, funky, green gooseberries, bit herbal. T: sour fruity, green peach, funky, woody, gooseberries, bit puckering, herbal, caramel touch, soft carbonation, very nice balanced, BA Gruit is quite rare still, enjoyed for sure.

Bottle from Etre Gourmete. Cloudy pale yellow with small white head. Tart already on the nose with juniper, ginger, straw, citrus and white wine. Tart and slightly acetic, taste is more citrussy than spicy, tart with unripe strawberries, vineager and tart white wine. Refreshing and tasty.

Bouteille 37.5cl, BB 21/09/2021, lot# P83.
Couleur dorée présentant un léger voile, le col est fin et blanc.
Arôme au nez fin de barrique, retrouve de fines effluves de vin blanc, petite pointe de baies vertes, citrique perce en rétro-nasal. Léger impact de le levure sauvage - funk/brett modéré. Retrouve de fines notes boisées, pomme verte voire de figue de Barbarie.
Palais est léger et offre un caractère aigre bien maîtrisé. Ici aussi, note fine de baies vertes-citrique avec note pamplemousse et une petite sécheresse boisée mais aussi de brett en toute fin de bouche. Le tout rappelle fortement un jeune lambic, le fini est un peu grinçant aux dents avec une petite pointe de groseille à maquereau et un fini discret tannique de vin blanc.
