OMER. Brut Nature is a copper coloured ‘Brut Style’ beer. The use of wild yeast (Brett) results in a pleasantly dry, low-sugar, ‘living’ beer, which evolves in the bottle and can be aged for at least 5 years.

Five different hops are used in the beer with dry hopping (Belgian hops) techniques reinforcing their fruity and spicy character. It results in a dry, bitter beer with a delicate aftertaste.

The various stages of fermentation, top fermentation and refermentation with wild yeast, mean the brewing process of the beer is at least 8 weeks.

Sample from bottle at Remko's bierproefavond. Didn't take notes, just enjoyed the beers and good company. Copper color, off-white head. Brett funk, some leather, fruity, some grape and Champagne yeast. Quite nice.

75cl bottle @ monthly tasting, Chez Sophie, June 23. Cheers Jeremy for this! Hazed reddish amber appearance, off-white head. Mild Brett aroma, continuing to taste with quite a hoppy bitterness, mild fruitiness... finishes a bit weak and dry. Needs a few more years in bottle I think.

19th June 2023, Shrewsbury Monthly Beer Swap in Chez Sophie. Five guys enjoying life taking bollox. I brought the (2022 vintage) 75cl bottle of this to the table; BB 20th September 2027. Nice amber body, off-white head that stayed for a while. Mild Brett wildness in a pretty malty beer, some light fruit action too. Wasn't wild/sour enough for the other 4, but it was just right for my palate.

1/X/22 - 75cl bottle from Geers (Oostakker), shared @ home, BB: 6/VII/26, 09:07 FBRUT21-0003B (2022-1341)

Clear orange beer, huge aery thick yellowish head, frothy, rocky, nice and solid, stable, adhesive, leaving a nice lacing in the glass. Aroma: soapy, floral, a bit yeasty, sweet impression. MF: ok carbon, medium body. Taste: a bit sweet, malty, grains, floral, bitter, a little herbal, very yeasty. Aftertaste: fruity, nice bitterness, more yeasty, herbal, dry, a bit grassy.

Bottle 750 ml, shared with kajser27 and Miro B. Clear dark orange with large white head. Quite carbonated. Nice hoppiness, flowery, quite bitter.

75cl bottle from Delhaize Chazal in Brussels. F: huge, egg-white, long lasting. C: amber to light coppery, hazy. A: malty, light brett touch, peach, floral, spicy touch. T: medium to full malty base, bready, light fruity, brett, banana touch, bit herbal, spicy, soft to medium carbonation, nice balanced beer, enjoyed for sure.

Very good, lightly amberish head over veiled red-copperish beer. Rainwater, wild yeasts, lactic acid, bread and a tad plastic smell. Bretts, including floormop, light-coloured malts. Citrus, buttermilk, hints at caramel. Lightly baked breadcrust (not Maillard). Quite slick, only Bretts preventing it to become sticky. Quite good carbonation. Surprisingly good. A world of difference with the dreary basic Omer. However, a better choice of Bretts (and others) might have brought this to yet another level.

Special edition of the popular Omer, launched a few months ago (with huge commercial success, I should add) in 75 cl bottles to commemorate the ten years of existence of the regular version; this one differs by using Brettanomyces ('wild yeast') for refermentation. Had it two times now so time for a review. Eggshell-white, large-bubbled and quite loosely structured but still generally stable, opening head on an initially clear, warm orange blonde beer with amberish tinge, lots of visible sparkling, misty with sediment. Aroma of indeed clear Brett ('horseblanket', fermenting apple juice, damp hay, even stale urine) hovering elegantly over impressions of ripe apricot, nectarine, lightly toasted white bread, banana peel, dough, dried thyme, straw and a less pleasant, but luckily vague touch of band aid possibly related to the Brett. Fruity onset, wrinkled old apples, banana peel and a dash of rhubarb without the sourness; dry from the start, with lively carbonation (minerally) and supple, full body. Rounded peanutty and toasted-white-bready malts with a clear caramelly edge, dried by Brettanomyces effects, leading to a nicely dry and crisp, bread-crusty, leafy hop bitterish finish which is further dried by the Brett, albeit in an elegant manner. Some halfripe fruit effects linger. Indeed a 'Bretty' ale, more so even than I was expecting based on both expectations and rumours; as with Orvélo Sprint tasted the same night, the application of Brett has significantly made an otherwise rather trivial beer (sorry to all those Omer fans out there) more interesting. And as with Orvélo Sprint, it would be fascinating to see what the Brett will do in a year or so - so I hope all those people jumping onto this particular beer the day it came out, also thought of cellaring a few for later... In all: better (or indeed 'Bretter') than expected and Bockor's most interesting beer so far, ignoring their 'foederbier' used as the basis for both Vander Ghinste Oud Bruin and (most of) the Jacobins series.
