For this Druif, we used Dornfelder grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Dornfelder is a dark-skinned variety, originally from Germany. We co-fermented lambic with freshly-pressed-shortly-skin-macerated Dornfelder grape juice in an oak foeder. We let it sit for four months and blended the grape lambic with some fresh lambic wort for the “prise de mousse” in the bottle. The final fruit intensity is 51,7% of grape juice per litre of Druif Dornfelder. 100% 3 fonteinen.

0,75l bottle at home. dark red color, small pink head. smells grapes, tannins, funk, minerals, spices. very nice smell. full body, soft carbonation. tastes tannins, grapes, funky, lots and lots of red wine. finishes dry and medium sour with notes of red wine, tannins and funky notes. very nice one, very wine forward

750mL bottled 11/02/2021, drunk 17/03/2023. Clear cranberry-raspberry, no head. Nose is rich and savory without any excessive acidity from grape or culture. Light malt and wheat grain with delicate, tart and bright grape. Neither grape nor culture outdoes the other and it comes off very harmonious for only 2 years in bottle. Fairly soft, dry, with plentiful wheat slickness as well as light grape acidity. More grape flavor than acid, thankfully and the texture remains mostly round on the finish. No hard lactic/cheese rind character many of the recent 3Fs have shown. Bright and tart, very drinkable and great balance overall.

Bottled (From Systembolaget Avion, Umeå, thanks Jonathan!). Deep beetroot red colour, small white head. Flavour is tannins, grapes, very red wineish along with nice brett too.

Poured from a 750 ml, Blend #30, 2019/2020 vintage bottle. Aroma is rather grape forward with a fairly large amount of tannins and must notes. A bit of a concord grape like aroma. Light oak notes. Light lambic notes with tannic mustiness and hints of lemon. Pours a dark purple with red hues and a medium large, moderately thick, pinkish purple head that recedes quickly to the edges where it is replenished. No lacing and small legs. Flavor is somewhat sweet with medium light acidity and hints of grain notes. Medium light bitterness and light alcohol notes. Lots of grape notes with medium light tannin and must notes. Much juicer than in the aroma. Hints of oak. Juice notes have hints of concord grape character but it's a bit lighter of a grape. A bit of a cherry and berry note to the grapes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid lambic. It's not nearly as acidic as I was expecting, but is a bit sweeter and juicier than I thought it would be. I would prefer a touch more lambic notes in the beer but maybe they will appear as this ages and the grape juice ferments a bit more.

ABV: 9.0%. Cloudy - hazy dark red colour with a average, frothy, good lacing, mostly lasting, off-white - pink head. Aroma is moderate malty, wheat, barnyard, leather, grapes, red grapes - skin, oak, funk, light cherry stone. Flavor is moderate sweet with a average to long duration, wheat, barnyard, grapes, cherry stone - oak, funky, grapes skin, dry. Body is medium, texture is watery to oily, carbonation is soft. Bottleat the Columbus Christmas Tasting. 15/12/2022. Thanks to Daniel Osprey. . A dark plummy blackberry, coloured pour with a halo of plummy head. Aroma is nice spicy dark blackberry, spicy, lingonberry, salty, itumen. Flavour is composed of semi sweet, salty black curerants, currant, prickly, nettle, veg, grass. Palate is dry tangy, prickly dark c=berries, prickly carbonation. Really nice.

Xmas Boozy Bottleshare. Thanks to Dan. Clear red wine colour beer, no real head. Palate is light and fairly dry, decent fine carbonation. A light lambic tartness, not too much and well balanced with nice red wineish berry fruits array. Dry finish. Blimey, a drinkable 3F!
