IMPERIAL STOUT AGED IN MAPLE SYRUP BOURBON BARRELS W/ WALNUT These barrels have been through the ringer! They started with bourbon, moved on to maple syrup, and finally they’re finishing off with our delicious Imperial Stout base, brewed in collaboration with the Chicago-based brewery Mikerphone. All those layers are the perfect blend of Americana and Canadiana, finished with an additional dose of that sweet syrup we all love, and toasted walnuts for a classic pairing.

HAPPY CANADA DAY! Collective Arts x Mikerphone Origin of Darkness 9% Imperial Stout w/ Maple Syrup & walnuts aged in bourbon maple syrup barrels Origins of darkness is a cool series collective arts (out of Hamilton, ON) do. This version poured an inky black with a rusty head of foam and had a big sweet bourbon and maple syrup (almost become sweet treacle and rum like) aroma. Full bodied with a raspy carbonation. You got some boozy heat going down. The flavor starts of bourbon barrel then goes maple before ending in a roasty cocoa stout notes. Then in the aftertaste the bourbon and maple return to duke it out continuously. A really tasty treat to celebrate with.

Canned (from Alko web, with Mats). Black colour, no head. Aroma is maple syrup, walnut, some slight toasted and dried fruits. Flavour is maple syrup and some fudge, walnut, wood and some sugary tones.

Can from Beer Merchants.com A black coloured pour with a healthy beige head on top. Rich, sweet, malty, bourbon, maple, caramel, vanilla, walnut taste and aroma. An elegant, complex imperial stout, excellent stuff.

Can from Gedeelde Vreugde. Hazy black, stable, frothy, dark beige head. Aroma of green apple (acetaldehyde), date, maple syrup, pistachio, walnut, bourbon, espresso, date, candied plum, melting fondant. Taste has sweet prune, date & green apple, bit sourish at that, covered in a malt body of milk chocolate, maple & brown sugar; roasted in the sense of sweetened espreso with a nutty edge. Peppery hoppy finish providing bitter toast, 'woody' walnut, sweet maple syrup and boozy bourbon alcohol. Full body, oily texture, average carbonation. Enjoyable; I think the maple syrup is less of an added value here than the walnut.

Black with creamy head. Really good. Nicely bitter. The sweet elements are not overpowering. Treacley in the fact that it has a complex bittersweetness. A touch of coffee cake. Oily but not sticky.

Black with a large foamy dark brown head that left good lacing. A bit roasty with floral hops followed by chocolate, maple syrup, nut and coffee. Long finish. Moderately full bodied and smooth

Canned 9/28/20, drunk 2/6/22. Undetermined clarity (seems opaque) with a staunch, small, though slightly fizzy, tan head. Nose is very vinous, with heavy prune and raisin augmented by spicy and liquor-like barrel character. Some light milk chocolate, but moreso burnt caramel and more dark fruit persist. Some light alcohol noted with roasted malts deep in the background. Poignant, spicy, rather alcoholic, though not sharply/hotly so, with raisin, prune, fig, caramel and other intense liquor-influenced notes. Not any real residual maple character and tons of roast and light milk chocolate. Somewhat creamy at times, though the maple syrup has lightened the body and it ends on a more watery note than I'd prefer. Overall, a bit too much acidity and alcohol despite the malts. Feels somewhat disjointed with huge bursts of dark fruit/vinousness followed by the palate being bogged down by slick, sluggish sugars and finally watery, old roast, light oxidation and alcohol. Certainly hasn't aged well, if it ever truly was great (doubtful). Not a trainwreck, but certainly nothing to write home about. Did not finish the 12 ounces.
