This wild beer has aged for several months in vats. It first fermented with our house yeast and our cocktail of bretts and lactic acid bacteria. We then enriched it with dried apricots and cubes of Bourbon barrels.

Clear orange beer, creamy light beige head, pretty stable, adhesive, leaving some lacing in the glass. Aroma: nice, pretty fruity, funky, rather acidic impression, dusty, funky, apricots. MF: soft carbon, medium body. Taste: nice, very acidic start, fruity, some stone fruit, pretty dry, a little funky, lemony, lemon juice, nice! Aftertaste: slightly bitter, tannins, fruity, apricots, very acidic, lots of lemon juice, nice beer.

Pours hazed amber. Small to no white head. Scent is very full, loads of apricot (mostly dried apricot) as well as brett-forward funk. Mouthwateringly delicious, as well as certazinly balanced, and oh so intense. Taste is Surprisingly high in acidity, due to higher than anticipated lactic acid. Brett remains prominent, as well as loads of apricot. Apricot sprinkled with sour-candy-sugar comes to mind. Very balanced, and very fun overall. Lovely stuff. Milder maltyness. Medium body (ends dry, but certainly doesnt feel thin) and medium to medium high carbo.

37,5cl bottle (BBF: 04/01/2022) from Etre Gourmet web shop. F: thin, egg-white, quick gone. C: amber, hazy. A: sour fruity, apricot, bit woody, bourbon touch, hint of brett. T: medium malty base, sour fruity, apricot, bit lemon, green gooseberries, woody, funky, bit puckering, brett touch, soft carbonation, very nice, fully enjoyed.

Bouteille 37.5cl, BB 04/01/2022, lot# P161, batch#1.
Orange sur léger voile presque sur un côté abricot, col fin blanc-cassé.
Arôme met de suite en avant de belles effluves d'abricot oscillant un peu sur le fermenté. En rétro une petite touche plus forte de Bourbon se fait présenté, cela confère de fines effluves vanillées. A ce point, pas grand chose en terme d'acidité. En s'ouvrant après une bonne demi heure, c'est certain que le Bourbon vient dominer - à cela je ne trouve pas le 'Bourbon' type fût mais bien un Bourbon vanillé un peu pâtissier de suite sur un côté un peu citrique.
Palais est acidulé avec une touche un peu acétique-brett, le tout s’adoucit rapidement en bouche avec l'apport des abricots qui gardent ce côté un peu veloutés fruité et ponctués par une douceur vanillée de Bourbon. Le tout fini un peu râpeux en bouche voire grinçant aux dents - belle pétillance avec une fin citrique.

J'avais lu les commentaires sur un autre site de notes de bières de masse - ces gens se plaignaient de côté trop acide quais impossible à boire - à croire que ces personnes n'ont jamais rien goûté hors des ipa milkshake et jus de fruits.
La Source offre une autre belle version de cette série barriqué-sauvage.
