Bottle. Color: Lightly hazy golden, white head. Aroma: Malty, vinuous, white wine, yeasty, grainy. Taste: Moderate tart white grape, wild yeast funk, hints of leather, light to moderate sweet, very light bitterness. A bit champagne-like mouthfeel. A lot of fine carbonation bubbles going up in the glass. Subtle mineral notes. Spicy hints. Dry-ish, subtle tannins. Just over average carbonation. Just under medium body. Beer-wine hybrid. Ok.

Super bretty. Has the nice blend of lambic funk next to the standard soapy and herbal saison

Pours hazed blonde. Small to medium small white head. Scent is full, saison, creamy touch by the oaky embrace of the beer. Recognizable white wine, without getting unpleasant. Taste is sharp, tad tart, oaky, full wine-like (fairly intense, but again, not unpleasant) . Chardonay is my guess, due to the buttery quality (not a negative feature here, such as diacetyl usually is in beer) . very complex. A story of very good balance, proving the known skill of Dok Brewing's mastermind Janos once more.

4 June 2021. At Dok Brewing Company; cheers to the Teamleader crew! Hazy ochre, thin, frothy, white head. Aroma of sour grape, gooseberry, kiwi, quince, green apple, sourdough, hay. Taste has sweet-sour grape, quince and apple over a solid sourdough-like malty base, bit wheaty and softly spicy bitter. Floral hoppy finish, bit bretty-funky, somewhat lactic too, whilst a very subtle alcoholic note points toward 'grappa' or actual white wine. Medium body, oily texture, soft carbonation. Rich Sour, complex but not overpowering, high drinkability.

New Dok beer since a couple of weeks, intended as a wine barrel aged saison – with a twist in the form of mixed fermentation which, though it may historically have been the norm centuries ago, is not a staple feature of traditional Belgian saison today, but anyway. Snow white, medium thick, moussy but slowly opening head on a cloudy straw blonde beer with deep golden hue. Aroma of lime juice, farmland, wild apples, green gooseberries, dry cider, stale urine touch, damp straw, potato juice, parsnip. Crisp, dry onset, green apple, Conference peer and lime, fizzy and very minerally carbonation (but fit for a saison), supple cereally and white-bready maltiness under a drying, quite ‘green-fruity’ lactic tartness. Aspects of sour apple, cucumber and green gooseberry linger in a primarily tart, very dry finish, adding soft hop bitterness and retronasal funk – apparently the ‘mixed’ fermentation here does not only involve a mixture of top-fermenting Saccharomyces with lactic bacteria, but with Brettanomyces yeast as well (actually Fantôme yeast was used, not typically containing Brett, but it could have gotten in here in several ways, of course). The wood adds drying tannins but not very strongly so, and white wine is only a very subtle hint, though the wine barrels have undoubtedly contributed to the tartness and dryness of this beer. Well, Dok had announced already that they were going to venture more and more into the realm of sour ales so here we are – after that “Dude, Where Are My Shorts”, yet another interesting, but altogether very different sour Dok ale.

Pretty cloudy orange beer, big creamy white head, stable, adhesive, leaving some lacing in the glass. Aroma: bit funky, little chemical, fruity, orange peel. MF: ok carbon, medium body. Taste: nice acidity, little funky, some brett, fruity notes, lots of oranges, some tangerines. Aftertaste: nice acidity, bit lemony, bitter touch, some tannins, dry finish, yeasty, lots of brett, wood character.
