We added gentian root and bitter oranges to the coolship overnight, for this Amaro-inspired sour/bitter beer. After a year of barrel-aging, we macerated the beer on Sicilian blood oranges of the Tarocco varietal.

Pours slightly hazy, amberblonde. Small , fast fading white head. Scent is Sharp, full on spices, mild , yet very raw grzainyness behind it. Maturing took good care of this, seemingly! Taste is tart, dry, very spice-forward, loads of citrus (bitter oranges) and a funky, earthy, very typical 'new' thing to me (gentian root) . Together they balance on the fine line of being over the top thouhg, and the idea of cleaning products / pot pourri comes dangerously close, but in a way it still works. Not at all my favorite Antidoot, but a respectable offering nevertheless.

Started this one on its own and the side-by-side with Wilder Billy Salat. Different beers, but a lovely comparison of citrus expression. This is super herbaceous, bitterness from the gentiane and wormwood in a clean aperitif-like note.

0,75l bottle at home. Bottled 03/2021. yellow clear color, small white head. smells very herbal, almost medicinal, heavy spices, oranges, thyme. lovely smell, very antidooty. full body, soft carbonation. tastes herbal, bitter, thyme, blood oranges, list spices, peppery. finishes with subtle sourness and medium bitter with notes of blood oranges, herbs and peppery notes. lovely, very typical Antidoot bitterness. I am digging this more and more. Great beer!

Dorée clair, col fin peu tenace blanc.
Arôme présente un léger bouquet herbacé, le tout rappelle un peu le romarin avec un rétro-nasal fin fruité d'agrumes;

La gentianne est difficile à noter - le goût est déjà particulier avec une amertume marqué qui ressort un peu plus avec l'apport des agrumes. Retrouve un peu le côté funk des oranges sanguines.

Clear blond yellow to orange beer, practically no head. Aroma: lots of oranges, orange peel, oxidized, floral, funky, nice! MF: lively carbon, medium body. Taste: bitter, soapy, orange peel, very oxidized, orange peel, bitter, quite some tannins. Aftertaste: very dry, herbal, bitter, a bit oxidized.

Yesterday. Paired with duck breast, carrots and a summer salad with orange vinaigrette. Absolutely gorgeous combo of bitter herbs, bright but mellow acidity, refreshing citrus fruits, light complex funk and plenty of oak. Love these sour/bitter beers!
