Draft @ Wanderlust 2021, shared with Gentse Biervereniging crew.
Dorée, léger paille, col fin blanc.
Arôme au bouquet léger, caractère grains pils - de la base de saison, rétro fin de bretts-lambic qui créent un nez centré sur le funk. Petite note fruitée classique belge en rétro.
Palais est frais, côté 'sour' - brett - voire effet du lambic sur la bière de base de saison, se ressent. Le tout garde un léger caractère frais herbacé et fleuri, un peu sec en fin de bouche - côté lambic - l'assemblage-mariage des deux ne fonctionne pas aussi bien qu'espéré - en fin de bouche je note un côté herbacé un peu 'off' - peut-être de ce mélange lambic et saison.

Clear to little cloudy orange beer, small creamy white head, little stable, bit adhesive. Aroma: fruity touch, brett, funky, nice, citrus notes, bit woody. MF: ok carbon medium body. Taste: bitter, fruity, lemony, lots of tannins, very woody, brett notes. Aftertaste: little funky, brett, dry and bitter, some grapefruit, decent, but was expecting a bit more funk and acidity…

Pours fairly unclear blonde, medium small white head. Scent is funky, brett, mild isovaleric acid, I assume by the lambic. Barnyard funk. Taste is fairly sharp, medium acidic, old and wet wood, funky, dry, recognizable (strong) saison phenols. Medium high carbo. Very decent ! A lot of recognizable factors from both saison (mostly) and lambic. I'm not amazed (personal taste ) but it's an impressivly balanced blend for sure. Might have prefered other lambic than de Troch though...

'Versnijbier' of saison and lambic by Dok Brewing Company, from tap at their premises in Hal 16, Dok Noord, Ghent. Snow white, moussy, shred-lacing, stable head over a hazy pale orangey peach blonde beer. Expressive and funky aroma of overripe gooseberries, moldy oranges, soggy bread, stale sweat, sour grapes, spoiled cucumber, lemon juice, damp hay, hint of manure. Crisp, sour onset, bit lemony but nowhere harshly acidic, sour apple and green gooseberry notes, fizzy carbonation, lightly bready and cereally malt backbone dried by vivid fruity-lactic tartness and adding a strong Bretty funkiness retronasally, sweaty and overripe-fruit-like to even slightly manure-ish but in a good way; late grassy hop bitterishness, dry and spicy, while this funky fruitiness prevails. Refreshing, funky, crisp - very enjoyable on a spring afternoon.

11 May 2021. At Dok Brewing Company. Cheers to Jeroen & Heleen for the afterwork drink! Hazy orange, thin, frothy, off-white head. Aroma of unripe orange, apricot, plum, horseblanket, green apple, vinegar, sourdough. Taste has sour citrus, green apple & plum, quite tart, funky, against a lactic and yoghurty malty backbone, aspect of wet grass & horseblanket. Bit spicy, subtle grassy hoppy finish, lingering tart fruit & a vinegar bite. Medium body, oily texture, soft to flat carbonation. Pretty decent effort, the lambic is not overpowering and I'd guess that was the intention.
