Belgian Gueuze-inspired beer. It has always been our dream to have a beer of this style available year round. It consists of a thoughtful blend of 1, 2, and 3-year-old spontaneously fermented beer! Every year we put away stock of Lambic-inspired beer brewed as closely to Belgian tradition as possible. It involves turbid mashing, a long boil with aged whole leaf hops, natural cooling and inoculation in our rooftop koelschip, and spontaneous barrel fermentation. The wort is fermented only with the natural yeast and bacteria that land on it overnight while cooling.

Bottle, at the March 2025 DCBeer share. Poured a hazy golden orange color with a very small white head. Aroma was some light funk, oak. Light dusty notes. Very delicate tasting, if that makes any sense. Very light peppery character, with an acidic character.

Bottle, at Matt's
Orange blond colour, hazy to cloudy. The aroma is full of bugs, some poop, fruit, light sulfur. Dry, carbonated, orange peel dominates, not much funk; wild but not a Lambic.

750ml @ Matt's (thx for the beer, dude!) house. Appearance: hazy straw with some white head. Aroma: rustic notes, bugs, some phenols. Taste: along the same lines, with some sulfur and minerals, fruity. Overall: a really nice NA try to brew a lambic, for sure, one of the best attempt on the style I've had so far.

750mL bottle. Pours murky yellowish. Aroma is very leathery and old wood; a good amount of funk. Flavour has some wood, bugs?, slight peppery bite. Funky, dry. Not really a geuze, but a great wild ale.

Cloudy dullish colour. The aroma is a bit leathery, with some mandarin and brett C. Lighter body, more leathery notes, hint of barrel. Good complexity, nice dryness, mouthfeel is pretty solid, gueuzy.

750mL bottle, pours a hazy golden orange with a small white head. Aroma has a fragrant array of bugs, somewhat lambic-like but less intensely funky, with some oak. Flavour has some peppery notes, a little oak, some bugs, and unfortunately low-level phenols that weren't detectable on the nose. Oaky, phenolic, buggy finish. Not convincing as a gueuze, but if I think of it as a blended wild ale, it's not bad despite the phenols.

Bottle pour at Proletariat is a crazy purple, translucent, no head. Huge merlot nose, jammy and tart, cherries and currants. Flavor has some orange rind and sour beer base but then huge red wine barrel. Lacks some complexity for a beer that was a 3 year sour blend, but the red wine and barrel helps out alot. Full bodied finish with tannins.

750mL bottled June 2020, drunk 1/21/23. Chill hazed brass-copper. White head to ring quickly. No vinegar, lots of various, fairly easygoing funk, leather, quite oaky and I must say, very, very authentically lambic-like. No alcohol, rather lactic. Soft texture, wheat heavy and chewy. Quite oaky, strong wine influence with some strong acidity, perhaps just a touch sharp. Good funk though no sulfur :(. A bit strong all-around, not sure why this is such a high abv relative to the style. It just kind of bogs down in acidity, tannin, grape, even the relatively more sluggish texture. Knock off 2% abv, lighten and brighten it up and then we'll talk.

750 ml bottle shared by ClarkVV. Thanks! Aroma has bright floral and citrusy yeast notes. Taste is tart and yeasty, quite funky, wood notes. Slightly acidic on the finish. Oak sharpness. Soft carbonation, really decent.

Bottle pour at St Gambrinus. Pours orange brown. Funk, intense barnyard, blue cheese, pear, acid, white wine vinegar, scrumpy, a really mature crumbly salty cheddar, Parmesan rind, grapefruit zest. Low carbonation. Intensely complex, but also quite tasty.
