It's a Saison inspired by those brewed in Wallonia (mainly in the Hainaut region) and in a part of Flanders in the 19th century. Yvan has been studying the subject since 2004, when the book "Farmhouse Ales" was published, for which he wrote the chapter on the history of this style, which is so complicated to apprehend. The Saison de la Senne is somehow the liquid result of his research, uninterrupted since.
The Saisons were part of the broad family of the"Bières de Garde" (Keeping beers), barrel-aged and with a very long shelf life. They were often blended with an old sour beer with a vinous character, which would give it its typical flavor, sought after by the drinkers of the time. The sour beer could have been produced in the brewery itself, but sometimes, as is proven by old documents, the Saison brewers could buy it from the most famous brewers of sour beer at the time: the Lambic brewers. We have chosen this method, and brought Lambic from one of the most famous Lambic brewery in the world: our friends at Cantillon - whom we deeply thank!
The result is an extremely complex but at the same time very refreshing beer (which is characteristic of the style). It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling.
Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of rustic cereals (spelt and rye), quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance.

330mL bottle, pours a hazy bright golden with a medium white head. Aroma brings out plenty of rustic notes, considerable funk from the lambic, and a little citrus. Flavour is wild and funky, with plenty of barnyard funk, rustic saison yeast, a touch of citrus, and a touch of hay. Having never had the base saison (how is that possible??), I can't compare them; but the Cantillon adds a nice dimension to amp up this saison. Very good.

Hoppy, dry, sour. Green apple, grainy malts, bitter. Quite sour for a belgian. Nice.

ABV: 6.0%. Clear medium yellow colour with virtually no head. Aroma is moderate malty, pale malt, fruity malt, moderate yeasty, fruity yeast, funk, grapes. Flavor is moderate sweet with a average to long duration, funky, grapes, citrus, pale malt, yeast. Body is medium, texture is oily to watery, carbonation is soft. [20220123]

Bottle. Hazy golden color with white head. Aroma is nice fruits, damped mango, vineous funk, all in all not too extreme, but just great flavours. Taste is kinda juicy but also dry-ish, funky, fruity, jammy, and a dash of Lambic character in there too. Surprisingly thick mouthfeel, decent carbonation too. Wow. I am inclined to call this a masterpiece, and for De La Senne, that means something.

Bottle. Misty golden amber with an inch of white head that fades to a cm or so and lasts pretty well. Aroma of white wine, old lemons, oak, crackery dough, bracken, spices - became aware this was blended with lambic as I popped the cap. Sour and bitter with sunny fruity notes as well as a neatly dry finish. Lovely texture is light but creamy. Very refreshing.

Bouteille 33cl, bottled 26/03/2021, BB 26/03/2026.
Dorée pâle restant assez claire, col épais blanc épais et tenace voire blanc-cassé.
Arôme est sublime et donne de belles notes venant de l'alliance du lambic avec ce bouquet signature de DLS - le tout présente un léger effet funk, fruité vert allant vers la groseille verte.
Palais est complexe - plaisir de revoir cette version - ici, bel effet de lambic, effet cave, grenier, humidité avec un palais centré sur les céréales - baies vertes - groseille, voire boisé Chardonnay. Le côté seigle et épeautre apporte une petite touche d'épicé, voire pointe de noix, fini est râpeux - amertume légère qui arrive en retrait de ce caractère funk.

Bottle at home in Hackney - picked up from Etre. Pours unclear gold with a big, fluffy pure white head. Lightly sweet, a little funky and acidic, pale wood, grass, lemon, somewhat zesty, salty. Light bodied with fine, massaging carbonation. Pretty clean finish, more salt, citrus zest, light grassy bitterness. Good one.

Batch 2021 at 6%. Hazy golden, huge, frothy, white head. Aroma of wild apple, unripe peach, sour grape, hay, grass, wood, white wine, gooseberry. Taste has sweet-sour apple, pear, gooseberry & grape in a bready malt body, surrounded by bretty, funky hay, yeast & leather notes, low lactic acidity overall. Grassy hoppy finish, woody, bretty, lots of funky yellow fruit and a hint of white wine (but not necessarily alcohol warmth). Medium body, slick-creamy texture, average-moussy carbonation. Quite an amazing blend of styles: recognisable Saison character with supporting lambic features; very refreshing and nicely tart. My highest-rated Saison thus far.
