The beer that we dreamt about for a long time, from days when the brewery was just a twinkle in our minds eye. Choosing our finest Saison from foudre no.1 and wine barriques, we blended in a large portion of Belgian Lambic that has been aging at Burning Sky. Refined, complex and spritzy, this beer can be enjoyed now or left to age further.

Bottle share with my ladies to celebrate Abby being 6 months old. It pours clear golden with a thick, fluffy white head. The aroma is musty, funky, barnyard, wet hay, doughy bread, granny smith apple, zingy lemon, gooseberry, white currant and oak. The taste is crisp, dry, tart and puckering upfront, musty, vinous, white grape, grape skin, gooseberry, lemon sherbet, splash of acidity, doughy bread, hay, funk, barnyard and light minerality with a drying and zingy finish. Medium body and moderate, fluffy carbonation. Great depth of flavour and balance. Pretty delicious.

Bottle. Burning Sky online. Light haze on a medium gold. Thin white head is lasting and semi lacing. Nose has tart apple. White wine vinegar. Cheesy, oaky funk. Dessert apple. Taste is tart, dry, and green apple bitter. Light to medium body. Crisp and fine carbonation. A little tangy and dry. Minimal acidity. Tart, mouthwatering finish. Nice. Will look forward to trying this again a few months down the line.

Keg at the Kernel taproom during the Four Friends event. Pours clear gold with a creamy, white head. Lovely beer, nicely funky, with moderate acidity, subtle citrus tang. Light to medium bodied with fine, massaging carbonation. Well balanced finish, funky and clean. Super.
