Saison Hallertau is a blend of four barrels from three worts brewed in January, March, and August 2019. It was dry-hopped with whole leaf Hallertau Blanc, Mandarina Bavaria, and Fuggles.The beer is a bitter, amber saison with a good balance of malt, yeast, and hop flavour. A small quantity was released relatively fresh last year through Favourite Beers, as a tribute to Nicky Norwood, wife of owner Leigh. The further ageing since has allowed time for the wild yeast to significantly modify the hop aromatics and add further depths of funk.

Bottle shared in Watford - cheers to Dave. Pours unclear orange with a creamy, white head. Lightly sweet, nice citric tartness, fairly dry, quenching, pale wood, grass. Light bodied with spritzy carbonation. Quenching finish, woody dryness, more citric bite. Sound.

Bottle at home shared at the friendly Friday tasting. 25/06/2021. A hazed golden yellow coloured pour with a halo of white head. Aroma is sour white lacto, young lambic, white grape spicy. Flavour is composed of semi sweet, dusty apricot, fuzzy peach, lacto, funky white grape, vinous. Pithy grape tannin. Drying.

25th June 2021 Tasting at Fergus gaff. Thanks to Wingman. As Mills Nicky. Hazy orange gold beer, small pale cream colour head. Palate is light and fairly dry, decent fine minerally carbonation. Light malts, a light creamy sweetness. Mildly tart lemon and orange. Pinch of sherbet. Nice St Clements vibe. Mild white wine vibe on the back end, blends in well. Light finish. Good palate cleanser and pretty drinkable. Not the 2nd coming just because it's Mills.

There is no difference to the previous beer, other than it has been sat in Mills’ cold store at around 12° since it was bottled, hence the copy and pasted rating... Tap. Favourite Beers, Cheltenham. Soft haze on a pale copper gold. Fine off white head stays the course. Nose has loads of funky fruit. It’s surprising there’s no stone fruit in this, because it definitely smells like it. Fresh cut wood. Light tannic notes. Fresh lemon brett. Some nettle and green leaf. Taste has a light tart sharpness. Touch of leafy bitterness. Clean and super drinkable. Fine sharp carbonation. Light tart and light bitter finish. Really well rounded. Smashed it by the pint.

Bottle, 750 ml shared with Miro B, Max and JFK10000. Hazy orange, large white head. Barnyard, very juicy, dry, funky, nice noble hops in aroma, citrus, barrel. Medium+ sourness. Medium carbonation. Another beautiful beer from Mills.

Bottle. Thanks to SirAlex. Pours hazy deep Golden with a small white head. Must, green Apples and funk. Oaky and dry. Sesame, funk and barnyard. Dry finish.

Bottle thanks to Kenny. It pours hazy orangey - amber with a medium fluffy white head. The aroma is bright, zingy, funky, bitter orange, campari, white grape, melon, lemon sherbet, refreshers, gooseberry, hay, oak and funk. The taste is crisp, dry, tart, puckering, juicy, zingy, white grape, gooseberry, melon, sherbet, refreshers, dib dab, musty, funky, minerality, fruity, tutti fruiti, oak, earth, some acidity, funk, hay and barnyard with a drying, zingy finish. Medium body and fine, moderate carbonation. All comes together well. Balanced moreish.
