Tournulus a été imaginée et élaborée en collaboration avec Titulus Pictus et le Restaurant Le tournant pour le quartier du Rideau à Ixelles. Il s'agit d'un moût de bière fermenté naturellement (sans aucun ajout de levure) avec du Grolleau en provenance du domaine des Hauts Baigneux durant la récolte 2020.
Fermentation en cuve inox, maturation en barriques de pinot noir et refermentation naturelle en bouteille pour un résultat acide, funky et ultra vineux. Il s'agit d'une boisson hybride entre un pétillant naturel et une Sour Ale. C'est frais et gourmand avec des arômes qui tendent vers les fruits blancs.

A light haze on this orange tinted yellow beer, a few white bubbles never form anything close to a head before quickly dying back. Nose is surprisingly cider like, scrumpi in fact. Palate is light, fairly dry, and has a good fine minerally crispness. The scrumpi character carries over from the nose but now plays second fiddle to some fairly tart white wine. Finishes light and dry with a fair bit of acetic bite. An interesting beer, somewhere between scrumpi and acidic white wine. Demonstrates the broad character of 'Grape Ale', long overdue to be recognised as a style for me, especially given the huge number of misguided style splits we have suffered. Whilst it engaged me bonce, it's a bit dry and quite a bit too acetic to bother my heart.

Clear pale yellow, thin, white head. Aroma of sour grape, kiwi, gooseberry, mandarin peel, wood, sourdough. Taste has sour grape, gooseberry, citrus and stonefruit over a soft sourdough-malty base. Tart, woody-tannic finish, with warming white wine-like alcohol. Medium body, oily texture, soft carbonation. Agreeable, but not my thing.

Pours unclear blonde. Scent is full, balsamic AF. Taste is sharp, tart, dry, acetic. Grapes are very mild to absent.

Clear pale blond beer, no head. Aroma: very fruity, apples, ripe pears, sweet touch, sourish impression. MF: ok carbon, medium to light body. Taste: pretty sourish, fruity, bit lemony, oxidation notes, bitter. Aftertaste: herbal, vegetal touch, sourish, a little bitter, funky, pretty acidic.

Bouteille 75cl, no BB.
Dorée pâle, col fin blanc retombant assez rapidement.
Arôme est marqué par ce côté 'sour', pas mal de raisin avec ce caractère funk qui se manifeste à chaque fois avec un rétro fruité de raisins qui reste un peu plus discret.
Palais sur un caractère 'sour' dominant, le tout oscille presque vers un effet de nail polish qui se rejoint à un léger fruité vert de groseille à maquereau avec un fini de moût de raisin - la fin de bouche reste cependant assez dure au niveau de l'acidité.

Effet pet-nat sans ajout de levure - pétillance naturelle du moût.
