This ongoing collaboration with cider maker Tom Oliver helped shape our approach to fermentation and blending. Tom Oliver makes cider and perry in small batches, using fresh pressed cider apples and perry pears, fermented by wild yeasts.
Foxbic IV is a spontaneously fermented blend of turbid wort and juice from the inimitable Foxwhelp bitter-sharp apple. This iteration was made using the turbid mash method in the style of traditional Lambic producers. The wort was fermented with Foxwhelp juice and cider lees in old oak barrels for 10 months.
The resulting blend was dry-hopped with whole-cone Amarillo before conditioning in bottle for six months. The finished drink is fairly soft on the palate, with crisp acidity and aromatics reminiscent of orange and peach.

750ml bottle from the brewery. Poured a hazy dark golden colour with a thin broken white head. The aroma is yeasty, herbal, peachy. The flavour is moderate sour, with a fresh, crisp, dry, mineral, juicy peach, yeasty, woody, vinous palate. Medium to light bodied with average carbonation. Awesome!

Bottle shared at kermis tasting thanks to JimGreen. Bit hazy golden. Quite floral, soft apple, wheat, lavender, dank hops, lime, wheat, peach, white wine. Medium sweet, less sour. Solid medium bodied. Very nice.

Sample uit 75cl fles, Zaandam Kerst/NY tasting. Goudgele kleur, dunne witte kraag. Ruikt niet heel fris, zwavel, hout, appel, smaak is veel beter, fris, bijna saison-achtig, herbaal, lavendel, licht citroenzuurtje en citroenrasp, verbena, iets bittere finish. Appels haal ik er vrijwel niet uit. Lekker.

Bottle shared at the craft beer junction bermondsey tasting. Many thanks.. A hazed golden yellow brushed gold halo of white head. Aroma is semi sweet floral citrus. Grass, lemon, floral, pineapple, green apple. Light funk, spicy apple, green apple.

Bottleshare at CBJ. Thanks to Shima. A light haze on this pale gold beer, small pale cream colour head. Airy palate, semi dry, decent fine carbonation. Mild malts, a thin creamy sweetness. Good floral appley cider vibe. Good stuff, slightly acetic.

750ml bottle online from the source. Pours almost clear orange gold with a white head. Aroma: sour apple, lemon, funk, oak. Taste: dry, sharp sour apple, lemon, white grape, oak, cider vibes, funky. Medium body with spritzy carbonation.
