Il mosto della Piè Veloce Lambicus è realizzato con un’importante percentuale di cereali succedanei (frumento e segale) e mediante una luppolatura oculata di stampo inglese (sia in amaro che in aroma). La fermentazione (effettuata fin dalla primaria con brettanomiceti Lambicus) e la maturazione (circa due mesi) avvengono direttamente in legno: prevalentemente all’interno di grandi botti (3.000 lt) che in passato ospitavano vino. Ne segue un successivo affinamento in bottiglia o in fusto per dare modo al Brett di continuare ad esprimersi.
L’utilizzo dello specifico ceppo di Brett Lambicus va a compenetrarsi con la luppolatura scelta conferendo toni fruttati di albicocca matura, agrumi e note terrose, assieme ad una delicata presenza acidula e alle intriganti componenti funky tipiche del brettanomyces (riconoscibili fin nella birra giovane, per poi rinvigorirsi con l’affinamento nel tempo).
L’utilizzo dello specifico ceppo di Brett Lambicus va a compenetrarsi con la luppolatura scelta conferendo toni fruttati di albicocca matura, agrumi e note terrose, assieme ad una delicata presenza acidula e alle intriganti componenti funky tipiche del brettanomyces (riconoscibili fin nella birra giovane, per poi rinvigorirsi con l’affinamento nel tempo).

Draught at AmmutsØn, Medium creamy head, hazxy quite deep orange color, , leather, funk, sour fruits, some citrus coming through later, mellow medium sourness. Very good, highly enjoyable.

Bottle, picked up at the brewery. Glowing gold. Soft haze. Fine white head is leggy and lasting. Nose has mouldy lemon brett. Clean oak. Spicy herb. Decent juice here, too. Taste is tart and dry, and juicy, bretty bitter. Juicy mouthfeel. Tart and clean. Fresh carbonation. Pretty drying. Lingering, tart brett bitterness to finish.

Bottle. Color: Very slightly hazy golden, white head. Aroma: Moderate sour, brett. Taste: Moderate to medium sour, bit vinuous, tart fruity notes of white grape skin, apple, berries. Moderate sweet and hopbitter. Clear funky notes of Brett. Grain. Some oak. Peppery hints. Dry mouthfeel. Pretty complex. Medium body, just below average carbonation. Nice beer.

On tap @Bir&Fud (Rome). Dorata carica/ambrata scarica, leggermente torbida, schiuma bianca media, non molto persistente. Al naso sentori enterici e di sella, cuoio, legno, note citriche, di uva e frutta bianca, leggero floreale. In bocca è acida media, citrica, leggermente tart. Corpo medio, carbonazione media. Che buona... bravissimi!

375ml bottle. Cloudy, orangey golden colour with small to average, thick, creamy, moderately lasting, minimally lacing, white head. Bretty, funky, slightly vinous and oaky aroma, notes of white grapes, nutmeg, bubblegum, apple juice, a touch of cinnamon. Taste is dry, tart, slightly funky and vinous fruity, slightly tangy, notes of white grapes, apple juice, a touch of nutmeg, oaky overtones, a peppery touch as well; slightly prickly carbonation.
