Pours a darker, very hazed blonde. Rather large white head. Scent is phenolic, but also a touch banana, very herbal (by yeast). Taste is very intensely bitter, high carbo (too high to me), full dryness. A very nice saison indeed !

On tap at DOK brewing Gent. Hazy gold colour lasting white head. Traditional saison aroma. yes quite full in the mouth. I quite liked it. some sweetness from the abv but then a dry finish. moderate carbonation. Good balance. yes very accomplished saison. classy

Draught, taster. @Dok Brewing, Gent (Belgium). 04/09/2022 [#5.360 Global - #198 Belgium - #8 Dok Brewing Company] Pours murky yellow with a medium and lacing white head. Aroma: wheat, lemon and clove. Taste: sharp lemony and spiced. Medium bodied, crisp. Next one please!

Hazy orange, small, frothy, white head. Aroma of dried orange peel, candied pineapple, apricot, banana peel, fruit cake, biscuit, clove. Taste has sweet banana, apricot & some bitter orange peel in a bready, wheaty, doughy malt body with spicy clove notes around it. Grassy hoppy finish, dry & yeasty yet with tart & equally sweetish fruits lingering. Medium body, slick texture, average carbonation. Interesting 'hybrid' of sorts.

New spelt saison by Dok, tasted as Brasserie de la Sambre’s saison festival. Snow white, moussy, somewhat irregular, medium thick head on a hazy yellow-golden blonde robe. Aroma of banana peel, cold chamomile tea, sweetclover, pear, green kiwi (the Nelson Sauvin hops I’m guessing), white bread, wholegrain crackers and indeed soggy spelt bread, clove, apple peel. Crisp, sufficiently fruity onset, banana peel, pear and pineapple aspects, medium carb, supple body; lovely bready and cracker-like malts with this spelt graininess (and dim sourishness) clearly noticeable, lingering fruitiness and upcoming spicy phenols, all connected by a peppery, leafy, drying and quenching hop bitterness in the end. Very nice interpretation of what indeed comes across as a 19th- and 20th-century style Walloon saison in the vein of Saison Dupont, Saison de Pipaix and Saison d’Epeautre (the latter also brewed with spelt). As classic as it gets in terms of the old standard saison style, but ‘pimped’ with a dash of New World hops, which in this case was apparently a brilliant idea, as it adds bright fruitiness matching well with the overall flavours.

Cloudy blond yellow beer, small creamy white head, a little stable, non adhesive. Aroma: very malty, grains, hay, cow fodder, nice stuff, a little fruity. MF: ok carbon, medium body. Taste: very malty, yeasty, banana, spicy, dry, a bit grassy. Aftertaste: more spices, coriander, bit fruity, lots of banana, banana peel, more spices, grains, cow fodder, a little sweet, grains, grassy touch, nice!
