Spontaan is brewed with organic malt and oats that grew next to the brewery. We used the last cold night of the brewing season 2019/2020 to cool down the beer in the coolship. The natural microorganisms settled in the beer and caused a spontaneous fermentation. After 22 months in red wine barrels, we blended the beer and re-fermented it in bottles. The beer shows notes of blood orange, wood and red wine. Bottled February 2022, 710 bottles

Bottle at the Garching Xmas tasting. Murky orange-golden body, off-white head. Huge vanilla and fruit from the barrels, at least compared to the spicy body, funky, minerally, fairly lean but kicking up a storm. Vague stone fruit, some tobacco trace paint. Lean, dry taste, the red wine providing the grape and vague vanilla and tobacco notes, a bit soft, lightly minty, lovely balanced. Lovely stuff!

Bottle at the Christmas Tasting. Golden amber, nice but fast disappearing head. Slightly malty nose, lots of sour character as expected. Some berry notes in the aroma and lots of oak. The flavor is a bit metallic, quite smooth sour notes, it's dry with a thin body but still has a nice mouthfeel. Very well balanced sour.
