Spontaneously fermented 18 months barrel aged coolship beer brewed with organic local barley and organic local raw wheat from evolutionary populations. finished on fresh local plums of ancient variety Sangue di Drago, from free trees in mixed cultivation with zero treatments. 4 months of maceration.

(Draft at Stockholm Beer & Whisky Festival, 25 Oct 2025) Amber colour, slightly hazy, with creamy pinkish head. Fruity nose with notes of plums, citrus and barnyard. Fruity, tart taste with plums, grapefruit, blood orange, barnyard and a generous funky acidity. No bitterness. Medium body, dry. Funky and tart with a generous plum character. Very nice.

Bottle at tasting at Porter & Sons. Thanks zvsn. Cloudy orange-red. Funky, fruity, vinegar, sour, oak, a bit of bitterness. Really good.

Draught No head left, copper-red clear beer. Syrup, plumsyrup, ink, maple dips/pancake syrup with a fruity edge in the aroma. Sour flavours, bit vinous, but again with a background of syrupy cakebottom. Bit sticky MF, yet acidburn and -thinning. It conveys an impression of added syrup to fake body. Not really convincing IMHO.

Clear pink amber beer, small creamy off-white head. Aroma: lots of diacetyl up front, that’s bad, a bit fruity but not much. MF: ok carbon, medium body. Taste: bad, dirty, diacetyl, sourish, yoghurt, cherries, meh. Aftertaste: acidic, yoghurt, lemony, plastic, very unpleasant, don’t like it at all!

Couleur pâle cuivre, col fin rosé.
Arôme est frais fruité avec un caractère prune qui se marie bien avec l'apport funk de la base de cette bière type lambic.
Palais présente un caractère barrique, funk plaisant avec une fine acidité fruitée de la prune qui se prête bien à une fine sucrosité latente venant également du fruit. Pointe acétique rappelant un vinaigre de Modène - d'un bon côté.
