Ekologisk Kloster är vår tolkning av de öl som i Belgien kallas quadrupel eller mörk starkale och bland annat bryggs hos de fromma trappistmunkarna i sex kloster i Belgien och ett i Holland. Alla dessa himmelska öl är mycket säregna och smakrika. Några saker har dock alla gemensamt, de är alla mer eller mindre starka och överjästa. De är dessutom flaskkonditionerade det vill säga buteljerade med jäst och inte pastöriserade för att utvecklas vidare. Kloster har en stor och komplex smak och arom med en doft som både är fruktig, kryddig och maltig. Dessa egenskaper återkommer i smaken där alkoholen framhäver smakerna ytterligare utan att dominera. Eftersmaken är lång och behaglig med fruktiga toner. Spår av choklad och apelsin trängs med smaker av karamelliserat socker och mörka mogna plommon.

Användning: Kloster är en öl att njuta. Dess stora värmande smak är en lisa för själen. Prova Kloster med exempelvis en rejält lagrad gorgonzola – de verkar gjorda för varandra.

Fyra sorters humle: First gold, Hallertauer tradition, Opal och Sovereign.
Övriga smaksättare: Pomerans, apelsin och råsocker

(Bottle 33 cl) Vintage 2002. Pours a hazy, amber golden with an off-white head leaving some lacework. Lovely aroma of caramel and overripe fruit. Solid body with some caramel and overripe fruit - lightly oxidized with a hoppy finish. But quite decent. 100507

2006 draught, 9%. Aroma of Belgian yeat, but not so distinct. Cloudy dark orange/brown colour. The flavour is quite Belgian, but again, not overly so. It has some christmas spices. Well-balanced and harmonic.

Bottle. Dark amber colour with a small off-white head. Malty fruity aroma. Dry malty flavor with hints of caramel and chocolate. Sweet malty chocolate aftertaste.

Dark brown, low creamy head. Sweet and heavy aroma - sugary, plums, raisims. Lovely complex flavorprofile with a milk chocolate base and all the notes from the aroma. I guess I like sweet beers :-)

Draught. Hazy orange/brown colour, small white head. Spicy, fruity, malty and berryish aroma. Almost like sahti in flavour, as it seems to have juniper (though this flavour is made with different spices, not juniper). Also some hints of malts and berries in flavour. An unclear dark red beer with no head. The aroma is alcoholic, malty, and very sweet. The flavor is slightly alcoholic, with a sharpness and powerful taste. A really good and complex flavor.

Potent alcohol hits hard in the aroma; warming blast in the palate, too. Malty, with the same flowery component as regular Kloster, but IMO the alcohol and increased yeastiness get in the way.
