Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang’s house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Aroma of noble hop followed by pale malt, yeast, and arguably ginger. Hazy golden color with a respectable white head that stayed awhile. Medium in body, mild in carbonation. The flavor is dominated by Brett, very arguably with ginger and floral. It changes a bit as the mouth accomodates. Turned lightly sweet on the third mouthful. Some lemon came out. The Brett subsides a bit. The finish is dry, and there is enough bitter to satisfy. This is complex, and I am sure I’ve missed something, so keep reading what others had to say. It’s not to die for, but it is to be savored.

On tap at the Vintage Estates, thanks Nuts. Very light appealing beery hay aroma. Light yellow and slightly hazy. Creamy head. Barely any carbonation on the palate. Rather crisp and refreshing for an 8% beer. You’d never know this is rather high alky, it is very well behaved and friendly. Wet wool blanket feel on the tongue. Friendly and easy to like. Some spices in the background. Does have a slight veggie spice attitude about it. Not thick and syrupy at all, Very lively. Cannot recall much bitterness on the finish, if any.

Drank this last night as my tribute to Michael Jackson. I might have found a better one but it was fine. The aroma hinted at a funky wet hay in the barn loft type of brett, that may have been a combination of the brett and dry hopping. Flavor was focused on a spiciness that could variously be attributed to hops or yeast, with a touch of funk. It was quite dry, very dry. Drinkable as I acclimated to the drying, semi-astringent palate. Soft, pleasing carbonation. Golden yellow color, light cloudiness, smallish head but generous lacing.

Draft at Vintage Estates. I really expected a different texture and flavor, so I was a little surprised at first. Ommegeddon poured a hazy gold with a fairly nice white head. Aromas were fairly subtle, but interesting. A little bit grassy, with coriander and some sour promises. Flavor was much more sour than I anticpated, and I was told that the brett hasn’t even fully taken hold yet. It wasn’t a total pucker flavor, but lemon would be a good description. Coriander was definitely there, too as were some grassy notes. All that said, it came off as slightly thin, which was hard to fathom given the 8% ABV. I didn’t really detect any of the alcohol, either. I would imagine this will get much better as it ages and the brett is allowed to do its thing.

Draft. Slightly hazy amber beer with no head. Slightly fruity, yeasty aroma. Fruity, yeasty, oaky flavor. Very refreshing - subdued tartness. Easy to drink. LIngering tart flavor, Medium body. Nice, but wanted a bit more of something.

What a disappointment. I expected so much more based on the scores. Besides being significantly overpriced at $22, this beer has very little to offer and even in the $8 range it would be a a disappointment. The aroma has light yeast and vegetabeles, but its lacks any kind of farmhouse or barnyard natural yeast character I expect from the best saisons. The flavor is very herbal, and also has more yeast and light spice, but everything about this beer is light. It lacks complexity for a beer of the caliber that appears to be competing with the best Belgian saisons. Light biscui finish. Score raised, now that I had one with some brett character. Some barnyard character, but no sourness like I hoped.

BCTC - had this one after the Biere de Mars, and found it to be far superior - cloudy golden color, with abundant, sticky lace - extremely floral aroma, with a mild sweetness and fruity esters of strawberry and citrus - semi-dry on the palate, with just a mild brett character that is actually easy to miss - the fruits from the aroma make their presence known, along with a mild spiciness and lots of earthy notes - beautifully crafted.

Draught Hazy lemon yellow with a very small white head. Lemon & Brett is what I get for nose. Extremely phenolic taste, "wet floormop" variety. Vaguely citrussy, but not really acidic in any way. Not very-well bodied, but it has a definite grist slickness. Extremely interesting, I’m sure, but I’m totally disappointed, as this was such a cultbeer on the Net. I cannot understand what they’re doing in Cooperstown - Hedwig - some consulting, maybe?

Tasted at Belgium Comes to Cooperstown, July 16, 2005. Hazy golden ale with a thin white head. Faint wheat and floral hops in aroma. Grainy mouthfeel, with herbal grassy notes, citrus, alcohol warmth. Medium bodied. Surprising good and interesting in mouth. 7-3-8-3-14

A hazy blonde ale with a thin white head. A pleasant aroma of wheat malt with coriander and light Brett. In mouth, a sweet crisp malt with light Brett, smooth hops, Rich and warming alcohol in finale. Stunning appearance that reminds me of Vervifontaine Blonde. Full and lasting is the perfectly-formed white, dense head atop the shining, sparkling, unfiltered, white-gold-meets-tangerine juice colored body. Tons of lacing. Aroma is just a pure, fantastically powerful shot of lovely, tart brett. In one word, pineapple! Reminds me of Mo Betta in that regard, though not nearly as concenrated a pineapple aroma. Spicy hops round out the edges, while some of the pale malt sugars serve as a backdrop. Juicy nectarines mingle with limes and starfruits. White pepper-like notes are probably just a result of the dry woody character, while the ginger is just faintly present. Lightly oily barnyard/leather notes present. Flavor comes right back at you with the brett. At once cleansing the palate and then delivering some light pale grains, hint of dry floral and grassy hops. More pineapple and lemon-lime notes. Very tight, expansive mouthfeel completes the experience while the brett lingers on, supported by malt that is neither too lightly done nor overly sweet. Spiciness from actual spices is very tame (which I realy appreciate). Hops play off the fruity/tart brett, adding complexity/layers to this wonder. Odd that they use cascades in the dry hopping, but who cares! This stuff is a masterpiece if I’ve ever had one. Anxiously awaiting the bottles. No alcohol present.
