Poured from the tap @ MBCC 2023 red session (finally adding my notes). Hazy gold with small white head. Peppery, gentle funk, dryness.

Yet another one in this inexhaustible stream of flavoured unblended lambics by Oud Beersel – some of which are ‘upgraded’ to bottled form in the Sparkling Infused series – this time using tailed pepper or ‘cubeb’, an Indonesian pepper species related to ordinary pepper but more aromatic, and used as a flavouring agent in gin and even cigarettes apparently. Far-fetched it seems, and I frankly never tasted or even saw actual cubeb, but given the aromatic qualities and the success of Cantillon’s black pepper Zwanze last year, this could actually turn out really well… Medium thick but open and dissipating, snow white head leaving a thin rim over a misty peach blonde robe with ochre-ish tinge. Aroma very herbal and peppery but not just pepper – indeed quite allspice-, somewhat cypress- and Szechuan pepper-like, blending in seamlessly with impressions of lemon thyme, fresh lemonbalm, lime zest, old oak wood, sourdough, dry leather, persimmon. Tart onset in a lime-like, fruity way, hints of green gooseberries, rhubarb and unripe apricots, softly carbonated so clearly refermented a bit; smooth bread-crusty core under strong lime-like lactic sourness, refreshed by the cubeb effect retronasally, adding these lemon thyme- and allspice-like ethereal elements, along with hints of dry old leather, green olives, persimmon and lemon zest. Tannic woodiness of course too, but not very astringently so – the whole remaining very supple, refreshing, aromatic and colourful, truly bringing that mysterious cubeb to the foreground and blending it perfectly with the lambic features. In that sense quite a refined lambic, in fact, and one that I would not mind seeing appear in Sparkling Infused bottled form.

10 November 2023. At Billie's Craft Beer Fest. Thanks to tderoeck for sharing today's beers - cheers to so many more!
Clear golden. Wet white pepper, thyme, rosemary, hard cheese. Sour plum, gooseberry, herb cheese, bit bitter spicy. Herbal hops, tart yellow fruit, pepper. Oily texture. Pleasant experiment.

Pous light to mid orange, with a hint of something between hazy and murky. No head. Aroma: a slightly muted down, not too distinct aroma that suggests moderate sourness: a bit of wet wood feel base with minimal funkiness, slight fruitiness (lemonish, hints of tangerine), not very prominent notes of a kind of peppery spiciness that could be described as slightly green/balsamic. Taste notes as per aroma, again quite indistinct/unclean, with some earthiness that doesn't feel like it should be there. Medium sweetness, light to medium sourness (mainly citric, lightly lactic). Finish/aftertaste has that offbeat earthy note and leaves a bit of sticky sweetness. Medium bodied, nearly flat with the slightest hint of carbonation. This was probably made with a low quality lambic batch to begin with, and the infusion didn't give it the spark it needed. Overall still drinkable, but certainly not satisfying.

10/XI/23 - on tap @ Billies Craft Beer Festival (Antwerp), Day 1 - part 2, BB: n/a (2023-947) Thanks to NathanVC for sharing today’s beers!
Clear blond beer, small creamy white head, unstable, non adhesive. Aroma: pretty peppery, lots of white pepper, floral, rose water, a bit zesty. MF: no carbon, medium to light body, bit of an oily texture. Taste: soft acidity up front, a bit lemony, peppery, watery, soft bitterness. Aftertaste: still a little bitter, more pepper flavour, ok but not great.
