Wild Ale with Sour Cherries and Fig Leaves.

The Wild Ale aged in oak barrels for approximately two years. We put the fig leaves and 300 gram Sour Cherries per liter Wild Ale together and let it have a second fermentation. This combination resulted in a complex but refreshing Wild Ale with notes of cherries, dark berries, and soft oak. The distinct acidity of the Wild Ale is nicely balanced with the acidity and fruitiness of the cherries. Fruit and barrels give some tannins and the fig leaves gives it a subtle earthiness and gives the beer a nice dry finish and an extra layer. We hope you are as happy with the result as we are!

A hazy pinkish red beer with a white lacing. Aroma of sour dry cherries, wood. Taste of wooden dry sour cherries, lactic fruits, dry sour finish.

Diese Brauerei war eine wirklich positive Überraschung auf dem CBF Wien. So lieferte sie in Ermangelung handwerklicher Belgier unter anderem tolles Kriek-Bier 🍒 in allerlei tollen Variationen. Dieses wurde mit Sauerkirschen und Feigenblättern 🍀 2 Jahre in Eichenfässern gelagert. Das ergibt nicht nur eine dunkle rotbraune Farbe, sondern auch tolle Barrique- 🪵 als auch erdige 🪦Aromen. Es ist sehr intensiv, aber so balanciert gestaltet, dass es doch noch süffig und spritzig bleibt. Ein wirklich tolles Bier.

Bottle. Opaque ruby berry. Cherry, berry, sour, candy, wood. Taste is sour cherry. Balanced. Nice long fruity warm aftertaste. Not sticky, not artificial. Like.

Bottled, thanks Stefan! At Garching, with him, Jonas & Ursula. Hazy red body, off-white head. Soft aroma, mixture of berry and herbal notes, feels like blackcurrant almost more than cherries at first, fresh and lively. Soft taste, cherries are more clear here, light tartness, actually less funk and barrel notes than I'd expected, though they are there, there's a mild cellar touch. Quite clean and clear, tasty!

Bottle. Opaque ruby color with pinkish head. Aroma is cherries, mild earthiness, fresh funk. Taste is cocktail cherries, minerals, some oak. Mineraly bite, sparkly. Solid, nice drinkability.

Bottle. Pink head, neon red. Cherry pop nose. Medium light sparkly, a hint tartness, a hint tannins, almond and cherry sparkly finish. Fun.

Bottle. Color: Deep dark purplish red, purple-pink head. Aroma: Dark tart cherries. Taste: Sweet and light to moderate tart cherries, floral, funky hints. Smooth, quite dense and a little greasy mouthfeel. Just over medium body, below average carbonation. Moderate to over moderate sweet. Lacking a bit of complexity. Otherwise a nice fruit-forward Wild Ale.
