The Meerts Tilquin series was made by fermenting fruit that had already been used once. Pinot Gris grapes were fermented for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle.

Bottle: Poured a golden color lambic with a small size foamy head with limited retention and not much lacing. Aroma of funky ester and some oak presence with light vinous notes. Taste is a mix of tart notes with some funky ester and some vinous riesling notes. Body is about average for style with low carbonation. Nice fruited lambic.

Bottle. Deep gold, a white head never really forms. Aroma is very gueuzey with what could be grapes or gentle oxidation, lots of oak. Low carbonation, slippery. Sour with old lemon, grapes, the barn, heaps of oak. Autumnal, elegantly tired.

First pour is a clear, pale blond colour with a light carbonation. Initial pickled onion aroma fades quickly. Then it's tart and woody. Lemon, white wine, oak. The wine element is clear with a fruity acidity and a yeasty dryness.

Bottle. Crystal clear golden. Deep mineral funk, old cellar, soft spicy grapes. It really has Riesling going on, but quite subtle, the funk and lemon meerts notes are much stronger. Maybe some apple. Solid medium sour, lighter sweet. Soft carbonation.

Bottle. Picked up at a pop up shop thing across from Cantillon. Poured the lot and got a hazed dark straw. No head. Tripe instant acid according to the missus. She’s said the same about the others we’ve had. She’s got a point. It’s grapy and clean. Minimum amount of funk as you might expect. I much prefer the real thing.
