Oak Fermented Rustic Danish Shipyard Ale

Refsæsøen is our multi grained Rustic Danish Shipyard Ale, incorporating barley, rye, emmer, and buckwheat.

We combine the brewing elements of both our Danish Wild Ales and Rustic Danish Shipyard Ales to create Refsæsøen. This means, amongst other things, we use aged hops in the beginning of the boil to combat excessive acidity while maintaining a balanced bitterness, and we fresh French Strisslesspalt hops at then end of the boil for a mild floral, lemon, and herbal character.

Refsæsøen aged for 12 months in a European oak foeder prior to being bottle conditioned for 8 months before release.

From tap at Mikkeller at Morebeer, Amsterdam. Big puckering sourness with citrus, lemon, oak, grass. Dry with just the kind of sour flavour I crave. Medium body. Truly lovely.

Tap at Nisha Craft Capital. Very well balanced piece. High sourness, but soft feeling, with good balance of individual acids. Light complementary bitterness, no sweetness. Lots of funk, barnyard, also light orange peel and a bit of green leaf like basil and bay leaf, not really sure where these come from. But all is working really well together. Great beer.

(Draught at Mikkeller at Morebeer, Amsterdam, 26 Aug 2022) Hazy golden colour with frothy, white head. Fruity, sourish nose with lemon, grapefruit, brett and oak wood. Fruity, tart taste with notes of lemon, grapefruit, tropical fruit, oak wood, funky yeast and a really tart finish. Low bitterness. Medium body, with a touch of sweetness. Quite complex and woody, with a generous acidity. Very nice.

From p. Poured clear and golden in color. Funky and tart. Apple skin and dried apricots. Vinegary notes, elegant, slightly raw feel perhaps.

Creamy white good mostly lasting head. Yellow colour. Moderate malty and light hoppy and moderate acetic aroma. Moderat bitter powerful acetic flavor. Long moderate bitter acetic finish. Creamy palate.

Brew festival 2022. Golden-orange color with a white head. Aroma is funk, farmhouse, citrus, oranges, lemon. Flavor is funk, farmhouse, citrus, oranges, lemon, vanilla, acidic, barnyard. Very nice beer.

On tap at Brew Festival. An orange-golden, unclear beer with a finger-thick white head leaving lacing. The aroma in funky and fruity, tropical, with barnyard, leather, hay and some lemon. Citrus notes and a hint of vanilla. It’s tart, full-bodied and nicely carbonated, with a good dash of lemon in the flavor. Generic fruityness, mostly tropical, with leathery, barnyardy funk, hints of hay and citrus and a touch of vanilla. Lasting fruity, funky finish. Quite delicious this one, and refreshing too. 220430
