The Italian-inspired grape ale in the ‘méthode Ghentoise’ series of sour and wild ales by Dok Brewing Company, made with Johanniter grape pomace (rather than ‘full’ grapes) and tasted next to Café De Reisduif, another recent grape ale from the same brewery. Medium thick, snow white, moussey, stable head on a clouded straw blonde beer with khaki-greenish tinge. Aroma of sour grapes, cucumber, green gooseberry, wood sorrel, grape seed oil, yellow plum, lemon zest, oxidized dry white wine, apple peel, unripe pear, old wood, dry haystack. Crisp and tart onset, colourfully fruity with lambic-y esters reinforcing the pomace, combining in impressions of sour grape, lime, cucumber, not quite ripe plum and strong Granny Smith apple, very sharply carbonated (a bit too stingy even for a sour ale of this sort); sleek, smooth white-bready malt core under loads of tart fruitiness, yellow-green as it were, but very lively and refreshing, never becoming astringently sour and maintaining crispness, brightness and drinkability to the very end. This is squeezing maximum fruitiness out of pomace (which is not even ‘complete’ fruit) in a way I have only Cantillon seen doing before – I assume Dok can take that as a compliment… Another beautiful ‘méthode Ghentoise’, which as a whole represents the ‘crème de la crème’ of what Dok has achieved in the now six years they have been brewing, in my humble opinion.

Huge white head, rather stable over veiled golden beer. Fruity, floral, wild yeasts, quite vinous aromas. Fresh, reviving acidity. Again grapey and vinous, bit lime/lemon on yoghurt, lactic acid. Perfumey fruitesters. Lipsmacking acidity, acidburn and -thinning. Good carbonation; refreshing. Want a vinous beer that is not a blended hybrid - this is it!
