This beer takes a quite different approach to showcasing some special hops. It is a 6.2% pale ale brewed with Maris Otter and hopped with Brook House Goldings as well as some very fine cones of Yakima Chief Centennial. The goal with this beer was to accent the refined bitterness and depth of Goldings with delicate, fruity top notes from Centennial. This meant that Goldings dominated the boil additions whereas Centennial was the large part of the dry hop.

After open fermentation with our house Saccharomyces, secondary fermentation was carried out in barrels chosen for the soft, floral character of the Brettanomyces strains resident therein. When the beer was ripe, it was blended with fresh beer and allowed to referment and mature again in bottles.

Bottle from Cotteridge Wines. Pours hazed yellow golden with a large foamy white cap. Aroma: funky brett vibes, lemon, sherbet, oak, hay, grass, herbal. Taste: dry with plenty of brett funk, earthy, light sharp lemon, grapefruit, oak, herbal. Medium body with foamy carbonation. Loved this.

Bottle from the Wee Vault. Appearance - golden orange and hazy. Nose - bread, lemon, bread and butter pudding. Sweet spice, like cinnamon but not cinnamon. Taste - candied lemon, bread and dry mineral yeast. Palate - light to medium bodied. Dry and persistent finish. Overall - lovely beer.

Bottle at home in Hackney - picked up from Cork & Cask online. Pours clear yellow-gold, lightly effervescent, with a billowing, frothy white head. Lightly sweet with notes of crispy straw, mild funk, lemon rind, a little cellar, bitter grass, dirty hay. Light bodied with active, massaging carbonation. Clean finish, more grass, straw, citrus peel, funk, cellar, a smattering of cobwebs. Good stuff overall.

375ml bottle from sophiesbeerstore.co.uk, shared with Eric and Sophie. Pours a misty yellow, large white head. Interesting, expected some kind of wild sourness but has a fresh herbal character, some mild sage, light mint perhaps, low carb, strong herbal linger, quite fresh and soothing overall. Decent.

Bottle from Premier Hop. It pours hazy blonde with a thick, fluffy white head. The aroma is bright and funky, brett vibes, hay, oak, vanilla, lemon - lime, zingy sherbet, light vanilla, dry grass and a touch of spice. The taste is firmly dry, dull bitterness, grassy, earthy, oak, sandalwood, funk, tannin, hay, spicy, grapefruit, dried lime, metallic twang, deep funky brett, dried grass and some floury bread with a bond dry, oaky finish. Medium body and moderate, fluffy carbonation. Absolutely adore the aroma. It is very dry though, which hampers the drinkability imo. Fun, unique stuff anyhow.
